Fanjeaux the French village where St. Dominic established the first convert of Dominican Sisters.

Many of the visitors are Dominicans making a pilgrimage or taking part in organized tours to learn of St Dominic’s life and preaching, other visitors include pilgrims on their way to Compostela in Spain, interested tourists and owners of smart camping cars who use the stopover site in the village.

La Table Cathare is a quite pleasant restaurant, with well prepared, standard regional dishes at acceptable prices in an entirely acceptable environment....

"We were staying in Fanjeaux for two weeks and rather than drive for several miles to seek an alternative, we walked to the town centre to try La Table Cathare to celebrate our anniversary. We were glad we did. The apearance of La Table Cathare is unassuming as you approach the entrance and the interior is that of a small, modest village restaurant but the food is good and the family that run the restaurant are extremely nice people. This is not an elegant French bistro, it is a village restaurant, but at the end of the evening, my wife turned to me and said, "I really enjoyed that!"...what better result could you ask for? I am, admittedly, fond of family restaurants, devoid of pretension where the service is friendly and genuine...and the food is good. So, for a pleasant, relaxed evening with good food, I recommend La Table Cathare. We liked it enough to return two more times, once for dinner and once for lunch".

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....


Malepère

A.O.C. Malepère

The Malepère region was awarded AOC status on May 2nd 2007. It is a hilly area south-west of the city of Carcassonne which is included in the appellation along with 31 other towns and villages. Although the area claims a great history of wine making it was in the 1970’s that the vineyards began to be replanted and VDQS status was granted. VDQS is the intermediary wine designation between Vin de Pays and AOC and is a testing ground for would-be AOC’s to prove that wines from all the producers share a common personality before they can be awarded full AOC status. Although an obscure region the Malepère is well worth a visit and offers a very different terrain to the more recognizable Languedoc appellations. There are many interesting medieval circular villages to visit. They were built this way to form ramparts to act as protection for the inhabitants. The Cathar religion was strong here and the area is immersed in history and folklore...

Eburomagus, the House of Archaeology is located in the heart of the village of Bram. It houses a permanent exhibition section together with an temporary exhibition area. The House of ogy presents 6 themes showing the wealth of the archaeological heritage of Lauragais from the prehistoric period to the middle ages. These include everyday life, exchanges, funeral rituals, etc. But it is the period of Roman antiquity that is of the greatest interest in view of the importance of the "Vicus Eburomagus", especially in relation to its pottery workshops....

Bram is a commune in the Aude department in the Languedoc-Roussillon region in southern France. Bram is part of the old province of Lauragais, and is 790 km from Paris. The CD33 road to the village follows the Roman road, the Romans settling in the area because of a climate which balanced the warmth of the Mediterranean with the freshness of the Atlantic. In 60BCE, they began construction of Bram and called it Eburomagus. Roman remains suggest the town was less round than the current town. Eburomagus disappeared. The modern town was born in the 12th century, built around its fortress church. By the 17th century Bram had outgrown its walls and expanded in concentric circles...

In 500 metres of the farm of Brugues in a natural aera very raised and shaded, on the ground in prairie and the lawn, the campsite are outlined at the edge of a lake of 2,5 hectares. The campsite (classified 4 cars in Gites de france) is open on June 1 to September 30...

Take a trip to Musée archéologique du Lauragais and discover the various collections displayed in this museum. Musée archéologique du Lauragais is part of the cultural heritage of and exhibits a fascinating collection of items. A former civil and crimi nal court set up by Catherine De Médicis, Queen of France and Countess of Lauragais. The prison, attached to the court, was built in the 17th century and has been converted into a museum. During the summer season it houses temporary exhibitions....

Castelnaudary

Castelnaudary is probably most famous for a 'peasant' dish of beans and various meats known as Cassoulet. It can take two days or more to prepare and is great comfort food for a chilly winter evening. The traditional cooking vessel is an earthenware pot from Issel called a cassole for which the dish is named. The ingredients include haricot beans grown in Pamiers or Lavelanet, duck confit, garlic sausage, pork, Toulouse sausage and mutton - but not necessarily all at the same time but a combination of several of them. If it's done absolutely to tradition, apparently is must be cooked in a baker's oven fired with rushes from the Montange Noire. In town you will find some fine old mansions, a restored windmill and an 18th Century semaphore tower. It is a real pleasure to spend a couple of hours in Castelnaudary having coffee or shopping for a picnic in the market. Today it serves as an important commercial centre for the rolling Lauragais farming country hereabouts, as it once was for the traffic on the Canal du Midi in the 17th century when agricultural and manufactured produce became easier to export to which it owed a period of prosperity. The Grand Bassin in the town at 7 hectares is the largest open area of water in the canal, and is today its major pleasure port. In fact, the most flattering view of the town is still that from the canal's Grand Bassin, which makes it look remarkably like a Greek island town, with its ancient houses climbing the hillside from the water's edge.
