Talairan, fortified village. You can walk through the vineyards at the edge of the cliffs and the dried up river Nielle. You can also admire the clear waters of Gourg Goutonnier...

> Leave the village on the D323. You’ll walk past a basin (known as the “lavoir à pétales”, the petal washtub), extremely pleasant during the warm summer months.

Take the chemin de la Croisette which will take you to the Notre-Dame-de-l’Ere chapel. Follow for about 600 m, before climbing the Buffanel on a small path to the left through the garrigue on the edge of the superb Gorges of the Nielle stream, twisting and turning 100 m below.

Walk up along the gorges on a small ridge path, and continue alongside a fenced vineyard.
> Next up is a gradual descent towards the “Gourg Goutonnier”, where you’ll be able to admire what the stream has done to the rocks, the main result being a giant pothole-like basin. During the high water season, in autumn, you’ll be able to see a succession of turquoise coloured basins.

The path goes up again along the Nielle for about 300 m, leading to a vineyard section. Follow the path lined with holm oaks till you reach the cottage called ‘cabane de Loulou’, then turn right on a track leading to the Cantéric sharecropping farm.

Walk around the pine copse and, on a hollowed-out path and amidst some vineyards, you’ll reach a partially tarred track. Cross the Fourques ravine and return on the small track of Notre-Dame-de-l’Ere where the stream is fordable.

Turn left towards the village, continue for about 200 m, then turn right at the edge of a vineyard followed by a holm oak plantation.

Cross some close-cropped grassy plots, remains of former pastures. Return to the village on the chemin des Moulins à Vent, where the remains of the bodies of two windmills can still be seen, left of the track.

The food, the service, the wine, the cheese . . . all were excellent. Nobody has given Gilles Goujon anything for free. On the contrary. In a bucolic atmosphere far from the mundane noise, in an austere building –sold by the tiny Town Hall– he has been progressively restoring for a decade, he has been able to captivate plenty of customers and reach the top of the French guides: 5 hats in Gault Millau and 3 stars in Michelin. We can say we are before a self-made man who had to fight and sweat blood to reach fame; a fame very few chefs deserve so clearly...
