Rivière de St Laurent de la Cabrerisse - St Laurent de la Cabrerisse

Amidst a magnificent landscape of vineyards, pine forests, olive trees and garrigue (Mediterranean scrubland), our village stretches along the river Nielle.

Ideally located between Carcassonne and its famous fortified cité and Narbonne with both a remarkable cathedral and relaxing beaches to offer, our village deserves its double “label” of “Gate of the Hautes Corbieres” as well as “ Heart of the Corbieres-Minervois country”.

You are only a few minutes away from Lagrasse, which abbey and middle-age cobbled streets have earned it a place on the list of France’s most beautiful villages.

And there is plenty more to see: the abbeys of Fontfroide and Caunes Minervois are well worth a visit, not to forget the Cathar history of the region with the castles of Termes, Villerouge Termenes, Aquilair, Minerves and many more “vertigo citadels” all within a short drive of the village.

The Canal du Midi and the Cité of Carcassonne are both inscribed on the Unesco World Heritage List. They offer beautiful opportunities for a half-day or daytrip in the sun...
In Saint Laurent de la Cabrerisse, you will enjoy real village life, which finds its rhythm in the different seasons that go by. You will walk the garrigua listening to the crickets singing and discover that each step exults the fragrance of lavender, mixed with that of thyme and rosemary.

Do not forget to look up in order not to miss the majestic flights of eagles, falcons and other birds of prey and then down again just in time to see a hare flee into the vineyards. Back to the village in the evening, you will be able to enjoy (with moderation !) white, rosé and red nectars, products of years of hard labour from generations of winemakers, active in this region since Antiquity.

The wines we produce in Saint Laurent are part of the most famous terroir from the Corbieres, that of Boutenac...

Cellier des Demoiselles - St laurent de la Cabrerisse

A.O.P. CorbièresThe Cellier des Demoiselles was created in 1914, just before the First World War. The name is a tribute to the women of the village who, in the absence of their men, strove to preserve our wines and our Terroir. Today, the story continues with wines developed in their image: Fruit and Flowers for some, character and intensity for others, revealing all the elegance and distinctiveness of our Terroir. Saint Laurent de la Cabrerisse is ideally situated between Carcassonne, a famous medieval City, and Narbonne, that honors its cathedral and its beaches. Our village, due to it localization, deserves a double nickname of « Porte des Hautes Corbières » and of «Cœur du Pays Corbières-Minervois»...

Domaine du Pech de L'Escale - Saint-Laurent-de-la-Cabrerisse

A.O.P. CorbièresDomaine du Pech de L'Escale has been a wine estate for over a century located near Lézignan-Corbières in the Aude and extends over 20 hectares of south-east facing hills in the Boutenac terroir, known for its clay-limestone soils , which promote a homogeneous water supply, allowing a delicacy of the aromas and a freshness of the wines. In the middle of the surrounding undergrowth, one can experience the song of the crickets, the scents of the earth, thyme, cistus, honeysuckle and conifers. Here Michel Romieu and his team have brought the best of the terroir to produce exceptional wines. Domaine du Pech de l'Escale is a wine estate that produces quality red, rosé or white wine. Wine is a complex product with specific qualities analyzed by connoisseurs. To help you choose your wine, we put at your disposal a qualified team to give you sound advice and let you taste a range of refined white, rosé and red wines...

Auberge
du Vieux Puits

Auberge du Vieux Puits - Fontjoncouse

If you love excellent food and wine, then there can be no finer restaurant in the South of France as Auberge du Vieux Puits. This 3 star Michelin restaurant is run by the celebrated French chef, Gilles Goujon. I can not recommend this restaurant highly enough. The food, the service, the wine, the cheese . . . all were excellent. Nobody has given Gilles Goujon anything for free. On the contrary. In a bucolic atmosphere far from the mundane noise, in an austere building –sold by the tiny Town Hall– he has been progressively restoring for a decade, he has been able to captivate plenty of customers and reach the top of the French guides: 5 hats in Gault Millau and 3 stars in Michelin. We can say we are before a self-made man who had to fight and sweat blood to reach fame; a fame very few chefs deserve so clearly...

The village is linked to the 8th century Benedictine abbey to which it owed its original prosperity by two graceful bridges spanning the river...

Both benefit from more than 10 years of experience in catering, a growing reputation, a great know-how and a very good local and international knowledge of the geographical and economic situation of Lagrasse. Une cuisine créative; Plates that are sometimes creative or traditional, or take pride of place in local products, short supply chain, product freshness, respect for seasonality and the environment. A restaurant that mixes young vineyards and old bottles, or the gourmet cuisine of Auguste Escoffier mixes modern techniques with the greatest simplicity, as well as the influence of their travels...
