A native of the region, Stéphane Castaing began at the Hotel School of Carcassonne, before perfecting his training in prestigious institutions around the world. Paris, Méribel, Porto Vecchio, Berlin, Tokyo are only a few steps on his way. In 2007, after 20 years of bourlingage, he decided to return to the fold. With his wife Benedicte, he created his Tantine et Tonton restaurant, which quickly became a must in Limoux and La Haute Vallée de l’Aude. The family quickly grew: first in 2012, with La Tantina in the central square of Limoux, and in 2014 with The Bistro Tantine, Place Carnot in Carcassonne.

End of 2014 a new door opens with the opportunity to take a mythical institutions of Limoux, the Grand Hôtel Moderne et Pigeon. This former convent in the city center, with its large garden with privacy, is the ideal location to expand his business: hotel service, private lounge, and organizing bespoke events such as seminars, weddings, group meals or family ... Three restaurants not linked by a concept, but the same approach: quality products, worked in the spirit house, surrounded by the head of a loyal team...
  Limoux is a charming little town on the Aude River, just 25 km south of Carcassonne. Located in the heart of the Cathar country, it is rich in over 2,000 years of history, endowed with a splendid cultural and historic heritage. Limoux, town of the Blanquette, the world's first sparkling wine, created in 1531, and its Carnival, the oldest and longest in the world, is a must-see for every photographer. Not to be missed is also the Automata museum, the Piano Museum, tracing the history of the manufacture of the piano, and the Petiet Museum (celebrating the work of locally born artist, Marie Petiet). A relaxing walk in the Bouichère Gardens where rare plant species are being preserved, and which features scented plants, or a visit to the very old pilgrim monastery, Notre Dame de Marceille, are also enjoyable experiences. Today, the reputation of Limoux and its events, such as the ‘Toques et Clochers' (Chefs' Hats and Bell Towers), the World longest Carnival, the Festival Cuivrée spéciale, the Festival NAVA (theater), concerts, La FERIA or the ‘Nuit des Bulles’ attract thousands of visitors from all over the world. We are proud to say that 40 weeks a year something is going on in Limoux. Limoux is ideally placed for exploring the Cathar Castles, Rennes le Chateau and its hidden treasure, Rennes les Bains with the thermal springs, the gorges de Galamus and the Hermitage, and of course, Carcassonne and its fortified town and the Canal du Midi, 2 world heritage sites. Needless to say, for the more energetic there are sports and activities galore. Walking, cycling, horse riding, sailing and kayaking ....the list goes on! A.O.P. Limoux Blanquette de Limoux, Crémant de Limoux, Blanquette Méthode Ancestrale Since 1875, Maison Guinot has been vinifying Blanquette and Crémant de Limoux using the ‘Méthode Traditionnelle’. When the grapes are ready, generally in September, they are picked by hand. Mauzac grapes, Chardonnay and Chenin Blanc are immediately pressed separately. The juice obtained is then naturally fermented in vats and turns into alcoholic white wine (Approximately 11% volume). In January following the harvest, the wines are blended with other years and bottled (to obtain perfectly balanced blends). The composition varies depending on blends and appellations, always following the same basic Blanquette (90% Mauzac minimum) and Crémant (60 % Chardonnay + Chenin Blanc + Mauzac). At harvest time natural yeasts then begin their work: they transform the remaining sugar into alcohol and CO ². The birth of the bubble is very aromatic during this second fermentation. The bottles will age while lying for 2 to 5 years, depending on the blend, for better flavor and taste. After this rest period, the bottles are turned by hand (remuage) on special racks in our cellars to facilitate the extraction of natural deposits (minerals, yeast ...) that accumulate in the temporary cap. We are the only producer in Limoux practicing manual ‘remuage’ which characterizes all the quality and tradition of our winemaking.

The Walled City of Carcassonne is known first and foremost as a fortified medieval town; but this rocky outcrop has been occupied by man since the 6th century B.C., first as a gaul settlement, then as a Roman town fitted with ramparts as early as the 3rd and 4th centuries A.D. On the western face of this primitive fortification rests the castle, built in the 12th century by the vicomtes Trencavels.In the early 13th century, Carcassonne was taken by Simon de Montfort during the Albigensian Crusade, then annexed to the royal estate. Fortification works lasted throughout the 13th century, with the construction of the outer wall and the modernisation of the inner rampart, making this place an impregnable fortress. The Cité lost its strategic importance after the signing of the Pyrénées Treaty in 1659. In the second half of the 19th century, it underwent a major restoration project supervised by Eugène Viollet-le-Duc and was included by UNESCO in the World Heritage List...

Saint Polycarp (Saint Policarpi in Occitan), has 165 inhabitants (census 2009), which are called Saint-Polycarpiens. The village of Saint-Polycarpe is located on the Meridian Green, the Paris Meridian. The Saint-Polycarpe brook crosses the tributary of the Aude 7 km from Limoux, 8 km from Saint-Hilaire, 24 km from Carcassonne, 31 km from Mouthoumet and 42 km from Lagrasse. The name of Saint Polycarp given to the abbey will also become the name of the village, the name of the primitive village being Rivograndi: Rieugrand. This patronage of Saint Polycarp suggests that the abbey held relics of the saint of Asia Minor, where he was born in the late 1st century AD.
