Enjoy dining in the peaceful flower-decked patio, or the quiet rustic atmosphere of the dining room. From this room, you can see, between the crenels of the parapet, the countryside of the Montagne Noire which, like the menus, changes with the seasons.

For the Master of the House, Bernard Marius, appetite rhymes with pleasure: “Sense is not always the best friend of a lover of good food; eating well is an art of living!”...

"Inside the walls of the midieval Cité, this is clearly several notches above the collection of restaurants found in the Place Marcou, which are fine, but you will quickly appreciate the difference. This is the higher end place found in a quiet part of the walled city. Service and atmosphere are excellent, but the food is the real star. And of that, I can't recommend the Foie Gras enough. Absolutely superb - the best I've had. Being Languedoc, duck in it's many forms feature prominently, but there are other Southern French favorites to satisfy, usually like pigeon, rabbit, and beef. All this, complemented with a good wine list showcasing, very highly recommended - one of my few 5 star recommendations".

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...


Limoux

A.O.C. Limoux

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOC to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOC Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....
