L'Escargot is undoubtedly one of the pillars of the Cité of Carcassonne. L'escargot is a very pleasant place. The interior is decorated with wood and wrought iron, custom made by artisans. A young and dynamic team, always smiling, and Thomas the owner takes care of the efficiency and to be at customer service. Overall, L'Escargot is a wine bar, you'll find a large selection of wines, including those with small bubbles and for a great price, which can be enjoyed by glass, if you do not necessarily want to buy a bottle

It is also a place where you can enjoy homemade tapas. You can choose a menu or a la carte dishes served on small slates. If we list all our favorite dishes than enumerate the list is too long, so here are some essentials: brochettes magret sauce caramel-poivre, Tataki de thon rouge, couteaux gratinés à l'aioli, chorizo grillé barbecue sauce, foie gras mi -cuit confit d'oignon à la grenadine... all are equally delicious, even the desserts! This year you can dine quietly in the garden of L'Escargot, two steps at 4 Rue Saint-Jean...
  "Food places can be a bit hit and miss in the old cite as can be the wine that they serve however this place was just great. My girlfriends and I nearly walked passed this unassuming restaurant/bar (it is just a few doors away from the tourist attraction the 'haunted house'). If the place looks full upstairs there are more seats to be found downstairs and in the little garden area at the back. We tried quite a few of the tapas on offer - snails (when in France as they say!), cheese platter, squid, fois gras, prawns, profiteroles, chocolate mousse (yes we had allot as we went back here a few times on our stay!!). All the food was absolutely delicious and we ordered some lovely wine to go with. Our favourites were the rose wine (sorry I don't remember the name but the staff recommended it) and some lovely sparkling wine called Premier Bulle which was superb. The staff were very friendly and welcoming too which really helped make this such a nice place to grab some lunch/spend the afternoon, have dinner or just pop in for a few sociable drinks & nibbles. They also speak English which was great when our school French ran out :)".

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...


Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...
