CUISINE DU TERROIR - Le Carignan restaurant overlooks the town hall of Saint-Laurent-de-la-Cabrerisse in the Aude and offers traditional dishes, grills, pizzas and seasonal dishes. Large rustic dining room and parking behind the town hall.

"A delightful first floor child friendly family run restaurant in a typical village at the gateway to the Hautes Corbieres. There was a reasonably extensive menu but it was the midweek daily lunchtime 'formule' that attracted out attention. For a measly €9.80, we were served an complimentary tapenade with mini toasts, a starter of a simple salad, the choice of 3/4 dishes of the day, a choice of 3/4 desserts of the day plus either 0.25l wine or coffee...... Service was prompt and with a smile. Closed Saturday noon, otherwise open for lunches and evening meals. A children's corner with comfy chairs, your and books could prove a pull for going familiar. We will certainly be returning before too long".
  The village has two restaurants : Le Carignan and Le Maison Gourmande, both offer authentic French cooking although Le Carignan also bakes its own pizzas as well. Most visitors state that both restaurants are reasonably priced for the quality of food that they serve.

There is also a bar that serves delicious and large home made pizzas, these are available most evenings throughout the summer. There are tables available outside the bar in the summer but these tend to be popular with visitors who like to drink in the village atmosphere in the warm summer evenings...

A.O.P. Corbières Since Greek merchants first introduced the cultivation of vines to the area more than 2,000 years ago, the Corbières region in Languedoc, south of France, has been intrinsically linked with wine growers and the making of wine. Recognizing the ideal grape growing conditions in Corbières, in the 12th Century, the monks of the Cistercian Order undertook the task of developing viniculture in the region. These monks were renowned as highly skilled wine growers. They worked wonders, and as a result, their agricultural domains became very prosperous. One of these domains was our Caraguilhes. From the beginning, Caraguilhes covered an area of some 600 unbroken hectares. Remarkably, over the course of history, the domain of Caraguilhes has remained intact. Centuries later, in 1958, Lionel Faivre, an established wine grower in Algeria, took over Caraguilhes with a vision to make authentic wine with organic grapes. An environmentalist, Lionel pioneered natural farming and wine-making practices by employing sustainable organic techniques. His refusal to use chemical fertilizers, herbicides and insecticides was almost unheard of at the time. Nearly thirty years later, he completed the final transformation of Caraguilhes into full organic production...

The name is a tribute to the women of the village who, in the absence of their men, strove to preserve our wines and our Terroir. Today, the story continues with wines developed in their image: Fruit and Flowers for some, character and intensity for others, revealing all the elegance and distinctiveness of our Terroir. Saint Laurent de la Cabrerisse is ideally situated between Carcassonne, a famous medieval City, and Narbonne, that honors its cathedral and its beaches. Our village, due to it localization, deserves a double nickname of « Porte des Hautes Corbières » and of «Cœur du Pays Corbières-Minervois»...

Talairan, fortified village. You can walk through the vineyards at the edge of the cliffs and the dried up river Nielle. You can also admire the clear waters of Gourg Goutonnier... Leave the village on the D323. You’ll walk past a basin (known as the “lavoir à pétales”, the petal washtub), extremely pleasant during the warm summer months. Take the chemin de la Croisette which will take you to the Notre-Dame-de-l’Ere chapel. Follow for about 600 m, before climbing the Buffanel on a small path to the left through the garrigue on the edge of the superb Gorges of the Nielle stream, twisting and turning 100 m below. Walk up along the gorges on a small ridge path, and continue alongside a fenced vineyard...
