Before visiting the Sainte-Marie d'Orbieu abbey, start by strolling through the medieval town, this charming place where you can admire, among other things, an old 14th-century covered market with stone pillars, craft stalls. art, as well as a Gothic style church listed as a Historic Monument.   Chef Fabien De Bruyn is a fervent supporter of responsible and local cuisine, working together for years with artisans from the Corbières (Les jardins d'Estarac, Vinaigrerie de Cyril Codina, etc.), he is also the chief representative of AOP Minervois and headliner of the Taste en Minervois festival (30,000 visitors). His career has allowed him to create and develop a vision of his own cuisine. His cuisine has grown across our region, which has been successful in the last restaurant he was associated with (Bistrogourmand Gaia) which has been awarded the Bib Gourmand 2018 by the famous Michelin guide.

Chef Valentin Renaud fell in love with the region very early, following their meeting during their studies of CAP Pâtissier at the Lycée Hôtelier in Perpignan, discovering at the same time the magnificent riches of the Lagrasse region which he will always remain fascinated with. First starting his young career by climbing all the positions one by one within the bakery "Le Moulin" (4 Stores, 2000 baguettes / day) in Narbonne, he then turned to the capital and went to complete his training at the Best Craftsman of France Laurent Dûchene. He will then take the path of dessert to the plate to another capital of taste, Annecy, in the gourmet restaurant L’Ancolie by chef Yves Lefebvre. Located in the commune of Lagrasse, the Benedictine monastery of the eighth century visited the monastic life in 2004 when it was bought by the community of the Canons Regular of the Mother of God. Officially ’one of the most beautiful villages in France’, Lagrasse is a small town nestled at the confluence of two valleys, and linked to the Benedictine abbey to which it owed its original prosperity by two graceful bridges spanning the river Orbieu. It is said that a peasant plowing his field there, found a statue of the Virgin. Depositing the village and returning to work his plot, he miraculously found the same figure. A chapel was built to sanctify this miracle and attested in the twelfth century. The devotion to Notre Dame de Carla remains from the Val de Dagne pilgrims who make the climb up the hill twice a year (the first Sunday of May and early September). Facing the chapel, the sheep was restored in 2006 at the initiative of an association "Amis de Notre Dame de Carla" and the support of local authorities. A Calvary erected on top of the hill, overlooking the gorge Alsou between the hills and the shell until Lauza Lacamp tray. The cross Wrought iron is present in the work of an ironworker from Rieux en Val in 1953...

Philippe Aïni, born in Bordeaux on June 22, 1952, father of three children, suddenly broke with his existence as a pastry worker at the age of 24, to devote himself to creation (mainly paintings and sculptures). Without artistic training, he will invent his art from top to bottom. For 8 years, alone in his studio, he paints fiercely, seeing very few artists and close friends; nevertheless, his work interests: certain art lovers ask him to exhibit it: Jean-Pierre Roche, in particular, director of the Émergences gallery in Bordeaux, who passionately loves his work, exhibits it on several occasions, thus contributing to the make known in the South-West. Likewise Guy Lafargue who runs the Art Cru gallery in Auch. Philippe Aïni, unusual creator, totally self-taught painter, free from any cultural influence, rejects any identification with an artistic current. His artistic career and his notoriety have led him to exhibit in most of the major international cultural scenes. Aïni's painting uses an unusual ingredient, unusual in the art world: mattress floss, which he uses to serve his expression. Using this substance mixed with glue like a malleable paste, he made a material of amazing plasticity and will make a considerable contribution to his creation, allowing him to go further, ever further, in the transmission of life ... Today, the artist works on precious wood (red cedar, mahogany, iroko, rosewood, cedar of Lebanon) in search of unknown expressions which for him carry the meaning of another humanity.

Rieux and Val lies at the foot of the Val de Dagne and belonged to the abbey of Lagrasse in the twelfth century. At that time the village was surrounded by fortifications with the two main guarded gates. The walls and gates were demolished in 1759. The bridge, Le pont de Rieux en Val, was built in the twelfth century and was intended for pedestrians, hence the steps and the narrow passage. The bridge was also the setting of the film released in 1961: "Le miracle des loups" with Jean Marais. And there is plenty more to see : the abbeys of Fontfroide and Caunes Minervois are well worth a visit, not to forget the Cathar history of the region with the castles of Termes, Villerouge Termenes, Aquilair, Minerves and many more “vertigo citadels” all within a short drive of the village. The Canal du Midi and the Cité of Carcassonne are both inscribed on the Unesco World Heritage List. They offer beautiful opportunities for a half-day or daytrip in the sun...
