Our terrace that looks onto a small courtyard, sheltered by colorful sails, welcomes you to the sunny days to sample the local cuisine and the peace of our region.

Patrick cooks with fresh products mainly from local producers, in perfect harmony with the seasons. Fruit, vegetables, cheese, olive oil and not forgetting the truffles, everything breathes our beautiful region, especially the wines that offer great diversity.

Restaurant L'Asphodèle offers a wide choice of menus, prepared with fresh and local produce, and our daily menu on weekdays € 15.50.
  These menus are adapted to the rhythm of the seasons, each for four months to ensure the freshness of our products. For booking the restaurant, do not hesitate to contact us for your family meals or just a group of friends. Patrick will prepare for you a personal and selected menu. Vegetarian food can be integrated into any of our menus. For the little gourmets who want to discover our cuisine, all dishes on the menu can be served in child portions.

Our wines, AOC Minervois or VDP are all from local productions. We work with wine producers within twenty kilometers of restaurant L'Asphodèle. This allows us to have a special relationship with the winemakers and learn to know the men behind the wines. We attach great importance to the promotion of these wines, for several years there has been much progress in the quality of products and their marketing. Many customers take advantage of a moment of relaxation in our restaurant with a few good wines that they can purchase the domain later. Ideally located in the heart of the Minervois, near the village of Siran, known as one of the jewels of our vineyards, we introduce you to share with great enthusiasm to discover our wines.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

L'Oulibou is a fascinating place to visit. Only 3.5 km from Mailhac, it produces some award winning oils and olives which can be sampled in the very mill where they have been made. You can also see the whole process that olives go through in order to make them into a wide variety of oils. The 'lucque' is one of the main olives of the Languedoc Roussillon area and it under goes some magical transformation within the walls of this traditional mill. 2 kilometres from Bize, just off the main road between Beziers and Carcassonne, you will find l’Oulibo, a cooperative that produces some of the best olives and olive oils in France. Bize is part of the Minervois region that includes the village of Minerve 10kms to the north which was the site of a famous siege by Simon de Montfort and the consequent martyrdom of the Cathars. Nearby are Beziers (35 minutes) and Narbonne (25 minutes) with cathedrals, excellent markets, shops, museums, and much more...

A place, a history, a passion ... Cross the aisle vault, lined tanks of old Verrees, enter the heart of our cave and visit the museum. Follow the marked route and discover the old tools, cooperage, carriages and wagons old. The Castle of Ventenac was erected in the eighteenth century on the foundations of an ancient castle. The name of Ventenac is its etymology in Roman times: Villa Ventenachus. Castrum Venthenacum was taken in the twelfth century by Simon de Montfort at the time of the Cathars. This is the nineteenth century that Ms. Seguy Saint Siran built the castle in its present form, giving it its prestigious appearance reminiscent of a religious building. At his death, the vineyard, the cellar and the castle became the property of Pauline Meyer. It is in 1938 that deal with the threat of war, the Meyer family left France....

We deliver bikes to you! You’ve got your bike - now where do you go? When you hire your bikes, you will be given a number of suggested routes together with large scale maps. The routes will always be on quiet roads and tracks and are graded according to terrain and distance. We are constantly adding trips starting at different villages and towns in the area. Some will be suitable for the whole family, whilst others are geared for road or mountain bike enthusiasts. Starting in 2012, a bicycle GPS is available to rent. This has all of the rides saved on it, and will be particularly useful for road bikes that don’t have mapholders.
