Restaurant L'Ambrosia is located in Pezens a village nearby and west of Carcassonne.

A few minutes from Carcassonne, this establishment houses a kitchen that makes many happy. Behind a fairly classic decor, in an elegant setting, all red tinted, the chef enchants his customers by reinventing the products. With an obvious technique, the national classics are thus taken over and beautifully served.
Restaurant l'Ambrosia - Pezens
L'Ambrosia was already a class restaurant - but the new owners are now even better cooked. The lunch menu offers great value for money, with each course expertly prepared and presented. The asparagus soup with a 'oeuf parfait' was absolutely delicious. This was followed by magret de canard, again preparing to perfection. The young and enthusiastic staff are helpful and attentive, yet the overall atmosphere is very relaxed. Excellent.

L'Ambrosia has since become a household name in Carcassonne and surroundings.

  Restaurant l'Ambrosia is considered one of the best restaurants in the department of Aude, where Sébastien Aliprandi cooks the stars of heaven, assisted by Valerie, his wife ... Sebastian, winner of the culinary contest Metro Gilles Goujon in December 2015, has a solid background and professional experience in several renowned restaurants, including the restaurant of the late Bernard Loiseau, La Côte d'Or in Saulieu.

New in 2018, the establishment, in the restaurant of a wine cellar with more than 400 references where you can choose your own wines in advance for your meal.

"Ambrosia - the atmosphere was great; the service almost perfect; the food delicious. I do not drink wine myself, but my wife assured me that it was excellent. I had not visited this restaurant for years, because I was not charmed by the kitchen of the previous owner and I was happy to hear that it was highly recommended by one of our friends. The fact that the chef took the time to speak to all guests at the end of the service was greatly appreciated. I highly recommend this restaurant"...

A.O.P. Cabardès A.O.P. Minervois Built under Louis XIII by Bernard de Pennautier, Treasurer of the States of Languedoc, Château de Pennautier (a historic monument) has been in the family since 1620. The vineyard has been entirely refurbished since the 1960s and the higher plots of land planted with vines. The direct heirs of the Pennautier family, Nicolas and Miren de Lorgeril are the 10th generation of winegrowers since the estate was founded. They took over in 1987. … and a terroir ! In the heart of the Cabardès appellation, the vines grow on the sunny, rugged hillsides south of the Montagne Noire, set at an altitude of 200 to 400 metres. The views from up there are breathtaking: at a glance, you can see the entire Pyrenean mountain range to the south, the Massif Central to the north, and the famous town of Carcassonne just a few miles away. This terroir combines clay-limestone soils,the Mediterranean heat, an Atlantic influence and the coolness of the mountains. Many areas of garrigue and rock on the Montagne Noire include vines, up to an altitude of 400 metres. - 46 hectares, with new grape varieties planted over the last 35 years, comprising 90 hectares AOC and 56 hectares Vin de Pays. - 21 hectares of Cabernet, 5 of Carignan, 6 of Cinsault, 22 of Chardonnay, 4 of Cot, 21 of Grenache, 36 of Merlot, 2 of Sauvignon, 26 of Syrah and 3 of Viognier: a stunning combination of grape varieties! - 6 kilometres north-west of Carcassonne. - 230 meter, this is the altitude of Pennautier, although its vines grow much higher up in the Cabardès appellation...

Bram is a commune in the Aude department in the Languedoc-Roussillon region in southern France. Bram is part of the old province of Lauragais, and is 790 km from Paris. The CD33 road to the village follows the Roman road, the Romans settling in the area because of a climate which balanced the warmth of the Mediterranean with the freshness of the Atlantic. In 60BCE, they began construction of Bram and called it Eburomagus. Roman remains suggest the town was less round than the current town. Eburomagus disappeared.
