Lefevre prepares his dishes with mainly local produce and seasonal ingredients. (Thézan Goat, Lamb Cathar, Honey Corbières, and of course the wine from Domaine de Château Lastours).
As the property of the Allard family since 2004, it embodies the encounter of the two passions that drive the family: an exceptional “terroir” to create great wines and extraordinary surroundings to accommodate your events.
Within the 800 hectares of the domain, the Château de Lastours vineyard is a very hilly piece of land where wer 100 hectares of terraced vines were planted. We urge you to come visit our cellar, taste and share our wines or participate in the oenological workshops.
The Château de Lastours has become a myth since it welcomed the participants of the Paris-Dakar and it is now unique destination that offers over 100 km of tracks for the amateurs and professionals of mechanical sports (4x4 or quad or buggy trekking, first time driving and training courses, trials). |

Chef, Jeremy Lefevre, the restaurant "La Bergerie" has honed his culinary skills by working in various parts of France. From the North, he was both Artisan Confectioner and worked the fish to Paris at Mr Jacques LEDIVELLEC.
At 36 years and over 16 years of experience in catering is the vineyards of Château de Lastours, Jeremy decided to settle in the Bergerie Restaurant.
You will discover a
varied and tasty food such as
Canellonni Lamb or warm foie
gras and cappucine of chestnut.

Château de Lastours is in the south of France, in the Corbières area, on an old Roman road known as the Via Domitia – which goes from Narbonne to Spain. A castrum was built on the route to accommodate travellers.
The Castrum de Turribus later became Château de Lastours, in reference to the watchtowers that overlooked the Via Domitia at this particularly dangerous point.
Château de Lastours has been the property of the Allard family since 2004. The family put all their energy and enthusiasm into making the most of their outstanding land. Their purpose is to grow great wines and attract tourists to this unrivalled location.
The Château de Lastours estate spans 850 hectares of steep hillsides and deep canyons. The 100-hectare terraced vineyard is nestled in the middle.
The estate has a Mediterranean climate, with hot, dry, sunny summers and precipitation spread evenly during the other three seasons.

A vineyard is made of parcels of vines in different types of soil in a particular geographic location in climate. These two factors define the soil that is part of a landscape and a region. Mattes is the place where the vines have been since 2000 years. In the Languedoc region of the Corbières near the Mediterranean sea where the domain extends over 615 ha seems to be the region of France where the mosaic of soils is the largest. More than 23 different soils were identified and they guarantee the diversity of our wines. Our 90 acres vineyard is composed of more or less 30 plots of 3 acres each distributed in two parts: The plain part called "en bas" near the Berre river with deep loamy soils is 27 acres wide.
The AOP part is about 60 acres large and surrounds the house. It has two distinct areas: a very gritty alluvial terrace called " le plateau" that is very similar to Chateauneuf du Pape. The second one is more heterogeneous with limestone and marl soils . In this area , our plots are more scattered, to keep the best ones...

Notre Dame des Oubiels is first a majestic ruin, historical monument of the thirteenth and fourteenth centuries, situated between vineyards and olive trees. It is accessed through the village to walk out, to spend pleasant moments there amid the 'Garrigue' with the view of Portel-des-Corbières. With fine weather, many Portel hikers arrives, walkers and tourists. Their first visit is the old ruined church, La Chapelle Notre Dame des Oubiels. And the questions are always the same: when was this church built? What is the origin of its name? Why they have built so far from the village? By whom has it been destroyed? We will try to respond succinctly. The ruins of this old church, Notre Dame des Oubiels (lambs), are located a kilometer west of the village, built near the défilé de la Reïnadouïre (la Reine des eaux), crossed by the river Berre...

Sigean is the essential stopover for exploring the Corbières Maritimes and lagoon environments. The hiking trails cross a natural environment that connects many remarkable and panoramic sites: old salt marshes, fishing villages ... The nautical base of Port Mahon, overlooking the island of Autute, is ideal for learning sports "soft" gliding and discover the biodiversity of the lakes. It is good to stroll through the alleys of the medieval quarter to get to the market square and taste the local products. Sigean is a lively village and the festivities punctuate the year: from outdoor concerts in summer to Christmas magic in winter. Admire the view of the lagoon at Port Mahon and the Salins in a green setting. Lovers of outdoor sports come to the nautical base of Port Mahon: catamaran, kayak, paddle, sailing ... a warm custom welcome! You can even go to the islands by kayak! If you like "art", don't miss the fantastic exhibitions of the LAC (Contemporary Art Center) in the hamlet of the same name, 5 minutes from Sigean. International artists exhibit there. Come on an adventure in the African Reserve, established in 1974, it is home to nearly 3,500 animals in semi-freedom on more than 300 acres...

Peyriac-de-Mer - A delightful road from Bages takes you along the narrow strip of land between the shore and the salt marshes to Peyriac-de-Mer, another fishing village on the bank of the lagoon. Drive slowly, and admire the view. Part of the lagoon has been declared a nature reserve, and this is a good place for spotting flamingos, herons, storks, and other waterfowl. The smaller Etang de Doul, near Peyriac, has the notable feature of being 43% salt ... comparable to the Dead Sea! Swimming, or rather floating, in it is an interesting experience. There is an archaeological museum in Peyriac-de-Mer containing finds from the nearby oppidum...

Randonnée La Serre

This journey from Roquefort des Corbières, long ago was close to our heart and it is time to do it before the summer heat has settled. The absence or rather the rarity of the shade and the water are put here. La Tramontane is also to be taken into account, although we do not find it extremely unpleasant. Under these conditions, this loop-shaped route will allow you to enjoy the scenery in complete tranquility from the heights. The clad yellow markings are present and well visible and precise. The start of the walk takes place between Cellier de Roquefort and the Café du Marché, at the mural. Go to the rue des Trois-Moulins and follow the Chemin Camin-del-Bosc about 300 meters. This route is also used for Le Sentier Cathare. Then take the Chemin de la Triolle to the right, leading to the exit of the village. The road leads along vineyards and passes into a narrow path surrounded by scrubland (garrigues) and fragrant pine trees, and then follow a footpath for a few hundred meters before turning left onto the Plateau Vabina. The progress will work well, the landscapes are amazing and soon one after another appears by following the path. Pastoral history shows itself well, which has to be placed in the context of time and seems to be well-helped by the idyllic landscape...

The museum is located in what was the home of the Martin
family in the 18h century. It brings together the finds from the archaeological
dig at the Oppidum of Pach Maho (or Pech Mau), dating from the 6th to the 3rd
centuries BC. The exhibits are presented in chronological and thematic order.

Musée Archéologique

The Archaeological Museum de Peyriac-de-Mer,
created by Henri Fabre in 1955, it brings together the product of excavations by the latter with Henri Barbouteau. Many traces show an occupation around the Doul since prehistoric times. The sarcophagus remains of St Paul reminds the implantation site of the old church and the location of the original village. In Gallo-Roman times, a habitat has been organized on the oppidum of the mill. The excavations have delivered a magnificent collection of amphorae and many everyday items. Finally, many vestiges of Roman colonization were found at the site of the ancient villas located near the Domitian...
