Chef Pierre Mesa dusts off and revisits typical dishes which have made the reputation of Aude and Languedoc terroirs. A modern wind blows over these dishes with studied beauty and sublimated flavours. The menu which evolves according the seasonal products guarantee freshness and culinary creativity.   Furthermore, Pierre Messa is an illustrious ambassador of this regional dish, as he belongs to the Académie universelle du Cassoulet. However, seated on the shady terrace, not far from the Comtal castle and Saint Nazaire basilica, the fox has tried a panfried foie gras cutlets upside-down tart, caramelised potatoes with Saint-Jean de Minervois muscat sesame gold biscuits followed by panfried scallops, risotto with celery ball, mushrooms, parmesan and smoked magret, balsamic cream and finally to lick your lips, a Valrhona dark chocolate sphere with hot cold berries. A real treat!

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. (3) Pass under the bridge and just afterwards exit Chemin de Sainte-Croix to go up left and turn right onto Chemin de la Porte de Fer. After 700 meters, leave the path to the right towards the Hauts de Sainte-Croix and continue for about 150 meters to reach the entrance of domaine de la Porte de Fer...

There are also two beaches (a sandy one and a pebble beach), which are suitable for swimming and have life guards present during the summer, a play area for children with bungee cords attached over trampolines, to give you extra bounce and o2 - an adventure park created by hanging ropes between trees where you can climb, slide and swing, including a long 'slide' over part of the lake itself...
