Up in the Corbières hills, which lead to the Pyrenees, the natural border between Spain and France, and no more than a 20-minute drive from the Cité of Carcassonne and equidistant between the villages of Montlaur and Monze and closest to the hamlet of Pradelles-en-Val, there is a most unexpected outpost of Italy.
The farm, which is not that easy to see from the road, has long been called Bourdasso. The property it occupies is the former winemaking facilities and house of the previous owners but the Italian influence is now obvious. The men wear predominantly white with their shirts conspicuously outside their trousers; the main dining room is stylishly simple and clean; and most crucially, and unusually for this part of the world, there is not a mention of cassoulet or confit du canard on the menu. The wine list even carries 10 different Italian red wines. |

The restaurant is housed in what was once an old wine ‘domaine’ surrounded by vineyards. But the vineyards have been sold off and the large long farmhouse with its tower, along with the high ceilinged barns where they once pressed the grapes, has been given a new life.
There’s a strong sense of design at work; someone, it seemed, was happy to experiment with salvaged industrial artefacts and the textures of brute wood, concrete, metal and glass were offset by the old stone and plaster walls.
Located about 20 minutes’ drive outside Carcassonne, Bourdasso is an excellent family-run Italian restaurant housed in a beautifully restored old building with a relaxed country atmosphere.
The food is cooked to perfection with top quality ingredients and from the wine list you can choose a lovely Italian wine to compliment your dinner.

The vines of Domaine Baillat grow in a nature of wild beauty, on poor soils surrounded by plants from the Mediterranean undergrowth, such as fennel, asparagus, broom, yellow garlic, orchids, in addition to thyme and rosemary. All wines from Domaine Baillat come from organic farming. Our wish is to produce truly original wines (linked to the origin)! We believe in the expression of "terroir wine" carried by the powerful breath of nature. Our goal was to identify the best soils capable of producing wines with great expression, suitable for aging and long-term aging. Our approach to working with wine is minimalist.
We have changed our cultivation practices to orient ourselves much more towards the health of the soil, the cornerstone of a wine's life. Hence our transition to organic farming in 2006 and our interest in biodynamics, aided by the powerful allies that are the Mediterranean climate, the increase and protection of populations of earthworms, ladybugs, the maintenance of hedges in the landscape...

Philippe Aïni, born in Bordeaux on June 22, 1952, father of three children, suddenly broke with his existence as a pastry worker at the age of 24, to devote himself to creation (mainly paintings and sculptures). Without artistic training, he will invent his art from top to bottom.
For 8 years, alone in his studio, he paints fiercely, seeing very few artists and close friends; nevertheless, his work interests: certain art lovers ask him to exhibit it: Jean-Pierre Roche, in particular, director of the Émergences gallery in Bordeaux, who passionately loves his work, exhibits it on several occasions, thus contributing to the make known in the South-West. Likewise Guy Lafargue who runs the Art Cru gallery in Auch.
Philippe Aïni, unusual creator, totally self-taught painter, free from any cultural influence, rejects any identification with an artistic current.
His artistic career and his notoriety have led him to exhibit in most of the major international cultural scenes.
Aïni's painting uses an unusual ingredient, unusual in the art world: mattress floss, which he uses to serve his expression.
Using this substance mixed with glue like a malleable paste, he made a material of amazing plasticity and will make a considerable contribution to his creation, allowing him to go further, ever further, in the transmission of life ...
Today, the artist works on precious wood (red cedar, mahogany, iroko, rosewood, cedar of Lebanon) in search of unknown expressions which for him carry the meaning of another humanity.

"Les Ponys d 'Adèle" was created in 2018 by Adéline Bougeant, following her desire to offer children an approach to horse riding focused on communication with horses, using methods that include gentleness, understanding and respect for the animal. Passionate about horses since childhood, Adèle first entered the equestrian world through training (acquisition of a Galop 7 level in an equestrian center, followed by obtaining the BAPAAT, ATE and BPJEPS diplomas necessary for its development), followed by professional experience as an animator of shows and children's groups in the Paris region, Equestrian animator in the south of France, Hiking guide in the Camargue and Corsica.
In addition to this traditional experience, she also had the opportunity to practice reasoned, logical driving and see that understanding and respecting the animal was much more rewarding than harshness and allowed it to perform faster with very satisfying results...

Randonnée Le Roc de Roland |

A few kilometers southwest of Moux, stands the Roc Gray set of limestone ridges which rises to 418 meters.
This rocky outcrop now restores historical heritage through the ruins and legends. In fact, the other name of 'Le Roc Gris' is 'Le Roc de Roland'... Legend has it that Roland used this rock to escape from his enemies, to be run away with his horse Alaric towards the Montagne Noir (on the other side of the Aude valley).
The momentum of the horse was so powerful that an imprint of his hoof is inlaid in stone forever.
Moux and its surroundings, including of their proximity to Alaric, are rich in hiking...

Just 15 minutes from Carcassonne, close to the Corbières, M'11 housed in the old cellar aging of the wine cooperative of Monze. A warm environment conducive to culinary events. The cellars Rocbère Corbières Maritimes which merged with the Cave of Monze, have released this building which will also showcase their productions. After the discovery of their treasures, you enter the large room's rustic restaurant with a unique view of the vineyard. A large fireplace for grilling throne in the background. Rudolph, the chef will delight you with the essential cassoulet but caldeirada (specialty style bouillabaisse made with fish and shellfish) or tournedos of duck breast with thyme and chardonnay juice...

Sentier Le Tour de Rieux en Val |

Rieux and Val lies at the foot of the Val de Dagne and belonged to the abbey of Lagrasse in the twelfth century. At that time the village was surrounded by fortifications with the two main guarded gates. The walls and gates were demolished in 1759.
The bridge, Le pont de Rieux en Val, was built in the twelfth century and was intended for pedestrians, hence the steps and the narrow passage. The bridge was also the setting of the film released in 1961: "Le miracle des loups" with Jean Marais.
In short Rieux-en-Val is certainly worth a visit, because of the old buildings you find yourself quickly back 1,000 years in time...

At the entrance to the Corbières, between the castle of Carcassonne and the medieval village of Lagrasse, there is a charming house, a sun-kissed nest built onto the hillside.
Completely renovated and at the edge of the village it has superb views of the vineyards and the Alaric mountain (600m high).
The holiday house includes:
kitchen, dining room, 2 small living rooms (with sofa-beds - one single, one double), 3 bedrooms (2 single beds, 2 double beds), one double bed on the mezanine, and 2 bathrooms (washbasins and showers).
Sheltered, private terrace (35sq m) with barbecue and a panoramic view of the valley. There is a multitude of things to do and see here, where the hills and moors are dotted with pretty villages, and where the Mediterranean sun shines for 300 days a year...
