Walking into the restaurant "La Belle Epoque", the simple and elegant décor makes you want to sit down. "Having specifically looked for a restaurant to eat one of the best cassoulet of Castelnaudary, we were faced with Restaurant Belle Epoque which we certainly did not disappoint. We took the menu at 32 euros and we chose all three for the same menu. The semi-cooked foie gras as entree was very good and tasty and the cassoulet was absolutely delicious. The dishes were generous (none of us has all be serving up food, despite the excellent quality of the dish). Followed by a very good cheese and for dessert we enjoyed a pear sorbet, on the recommendation of the owner, who was also very tasteful. The waiting staff were very welcoming with a lovely dining room. All in all a very good evening".
  The Cassoulet would be born in the city of Castelnaudary during the Hundred Years’ War (1337 – 1453). It is said that the starved and besieged inhabitants gathered all the available food and cooked a huge stew to rejuvinate the warriors, drive out the English and liberate the city. This dish was named after the stewpot (the casserole) in which it simmers.

"If I could swear myself to one French dish for the rest of my life, exclusively, it would be cassoulet. In fact, I had never before in my life tasted cassoulet. I was a cassoulet virgin. I thought cassoulet came from Toulouse, but my stepfather gasped and said, “No! It is from Castelnaudary!” The French are proud of the provenance of these things. What is it? Big white beans baked in broth with pork fat, pork confit, sometime duck or goose confit, and garlicky Toulouse sausages. The meat falls of the both, and pulls apart. The beans are soft and filling and so good and comforting. The fat is, well, fattening, but it so much flavor and crispiness to everything. It is so good, so hearty, so almost medieval that I could not get enough of it".

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

The Château de Saissac is a ruined Cathar castle in the southernmost tip of the commune of Saissac in the Aude département in the north-west of Carcassonne, France. It was once the residence of the powerful vassal family of Trencavel. Today the ruins are protected as official historical monuments of France. Saissac is mentioned in a legal document (an Acte) from the Abbey of Montolieu in 958, and again in a text of 960. The village is typical of the Black Mountains and is built between the ravines of the rivers Aiguebelle and Vernassonne, just above their confluence. Things to see in the village include the porte d'Autan, a lavoire built in granite, a second covered lavoire and a fine echauguette. Vestiges of the city walls (enceinte) are still visible around the ancient village. These walls date from the Fourteenth century, the same period that the castle of Saissac was restored...

The hub of the market, the food and fresh produce stalls, are situated in the central market square, which is a gorgeous covered arcade, typical in its bastide styling, yet more beautiful than most. The market spreads out around the town, but the heart is most definitely here in this very traditional square...
