Make a stopover at Restaurant Aux Quatre Saisons, and you will be welcomed by two restaurant enthusiasts Paul and Val Bridgestock, in an old stone building, which smells good relaxation and serenity. Beyond simply cooking, culinary art was an obvious choice for Paul, who likes to combine the flavours of local products and offer a whole range of recipes revisited.

Driven by the desire to constantly satisfy their customers, Paul in the kitchen and Val in the dining room, take pleasure in offering a personalized service, with 22 possible places in their restaurant, it is therefore essential to book in advance to avoid any disappointment. In the evening, it is lit only with candles to offer you a romantic atmosphere.

The menus evolve with the seasons and local products. A terrace will welcome you on sunny days, while in winter you can warm up by the large fireplace. However, what remains the specificity of this restaurant is their selection of cheeses served every evening from the trolley.

The Chef and his team prepare, package and deliver all meals under the highest hygiene standards to ensure your protection. They wear gloves, masks and hats. All food is labelled and packed in special boxes, hot food is also wrapped in aluminum foil. Hot and cold food is placed in separate transport bags. Then transported in separate hot and cold insulated containers.
  Our wine list changes regularly so please do check out our latest wine list. We feature many local wines as well as wines from other regions in France, plus selected wines from other countries such as Italy and Spain.

We do have some very nice bottles of Bordeaux and try to grab these when we see a very good producer/vintage. We currently have Cantenac Brown, Lagrange, Cantemerle, Lascombes to name a few.

From Italy we have some very nice Barolo and at the other end of the scale, some delicious Chianti. From Spain we have a superb Rioja Gran Reserva. In our sparkling wine range from France, we have an excellent selection of Blanquette de Limoux, Crémant de Limoux Rosé and, of course, Champagne.

Many of our local wines, white and red, come from the excellent producer Gérard Bertrand near Narbonne. If you are looking for a particular wine, please contact us and we will do our very best to source it for you.

At 300m above sea level, in the South of the Aude department, Quillan is the hub of Cathar Country. Surrounded by a circle of mountains, the first settlement in 781AD was on the right bank of the river. This town is the ideal place to practise open air sports and as a base to discover the Cathar heritage. Come to appreciate the charms of this historical area: The Roman church Notre-Dame (12th century), military fortress/ castle (13th century), mansions, the former Turkish baths which has been refurbished to house the Tourist office... There are many very beautiful natural sites to be discovered close to Quillan too: the Pierre-Lys GOrge, St Georges's Gorge, The Gorge of Galamus with it's hermitage half way down the side of the deep gorge, Cathars Castles, caves and grottes...

The castle of Puilaurens (also written Puylaurens) is mentioned for the first time early in the XIIIth century. It was a shelter for cathar people from 1241 to 1246. The date of its surrender to the royal troops is not known precisely, probably around 1250. As several other castles around, it was integrated by the King Saint Louis in the defensive plan of the border with the Aragon Kingdom. After the treaty of the Pyrenees in 1659, that has fixed definitively the border, the castle was downgraded and have been occupied by only a little garrison. This castle is located at an altitude of almost 700 metres and overlooks the village of Lapradelle, in the midst of a pine forest.  Access is via a pathway with chicanes preceded by a barbican...
