The restaurant "Ô portail Ô" is located on a nice square with a small fountain and tall trees which provide refreshing shade on hot summer days. The name of the square used to be "Place de la République", but is now called, how could it be otherwise; "Place du Portail Haut". The menu consists therefore of a surprising range of western and oriental delicacies.The chef, owner of the restaurant, has gained knowledge and experience in renowned restaurants in Belgium and is also passionate by the Oriental cuisine. About 30 years ago the restaurant was a bar. Evenings with music and dance were organized. The clients used to enjoy also the use of the 'pétanque' track. For years the cafe was abandoned and empty until the new owner refurbished the whole building and opened the restaurant “Ô portail Ô”. There are still some original elements remaining like the underside of the bar, the floor and of course the enormous mirrors.
  Specialities

Olonzac somehow manages to be bustling and interesting as well as peaceful and rural, a combination which perhaps should be experienced rather than explained! The little market town has a rural and timeless appeal, and carries along with it a sense that life should be lived with the rhythms of the seasons rather than at the frantic pace of modern life. Go to the market on Tuesday mornings, or Fridays in summer, and watch as the locals demonstrate that they always have time to chat, even as they go about their business or do their shopping.

The town is well equipped with colourful and fascinating shops, and there are boulangeries, patisseries, cafés and restaurants to enjoy. Everything you require is here, so you only need to venture further afield when you wish to visit some of the other lovely towns in the region.

Those who like to precede their wine tasting with some physical activity will find no shortage of sporting opportunities at hand. The region has everything with lakes, mountains, seaside, quiet lanes and rivers. Hence the sports of cycling, horse-riding, walking, rock climbing, swimming , fishing and many others are easily accessed from Olonzac.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic growers use no synthetic growth-regulators (such as Alar). As for not using pesticides, the organic alternative is to encourage natural predators of insect pests instead of using poisonous insecticides. Organic farmers promote "biodiversity" and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil. In wet climates the main difficulty is raised by the use of copper sulfate against mildew, which leaves over time levels of copper in the soil that need to be monitored....

Suggested activities: Canoeing and kayaking, Climbing, Speleology, Tir à l'arc, Mountain bike, Stand up paddle... Due to an illness, we had to cancel our "Canyoning" experience with another tour company at the last minute as they were unable to accommodate another date for our family. We rebooked with Eaurizon and we're glad we did...

We deliver bikes to you! You’ve got your bike - now where do you go? When you hire your bikes, you will be given a number of suggested routes together with large scale maps. The routes will always be on quiet roads and tracks and are graded according to terrain and distance. We are constantly adding trips starting at different villages and towns in the area. Some will be suitable for the whole family, whilst others are geared for road or mountain bike enthusiasts. Starting in 2012, a bicycle GPS is available to rent. This has all of the rides saved on it, and will be particularly useful for road bikes that don’t have mapholders.

Minerve has been selected as one of Les Plus Beaux Villages de France (‘The Most Beautiful Villages Of France’). Historically, the village has been the capital of the Minervois wine region. The main bridge leading into the village is closed to all passenger vehicles not owned by residents of Minerve. Of all of the original fortifications, only a slender octagonal tower, known locally as the Candela, survives. The village is situated on top of the gorge of the River Cesse in a naturally strong defensive position. Near the village the river disappears underground in large, naturally-carved tunnels....

L'Oulibou is a fascinating place to visit. Only 3.5 km from Mailhac, it produces some award winning oils and olives which can be sampled in the very mill where they have been made. You can also see the whole process that olives go through in order to make them into a wide variety of oils. The 'lucque' is one of the main olives of the Languedoc Roussillon area and it under goes some magical transformation within the walls of this traditional mill. 2 kilometres from Bize, just off the main road between Beziers and Carcassonne, you will find l’Oulibo, a cooperative that produces some of the best olives and olive oils in France. Bize is part of the Minervois region that includes the village of Minerve 10kms to the north which was the site of a famous siege by Simon de Montfort and the consequent martyrdom of the Cathars. Nearby are Beziers (35 minutes) and Narbonne (25 minutes) with cathedrals, excellent markets, shops, museums, and much more...
