Minerve has been selected as one of Les Plus Beaux Villages de France ('The Most Beautiful Villages Of France'). Historically, the village has been the capital of the Minervois wine region. The main bridge leading into the village is closed to all passenger vehicles not owned by residents of Minerve. Of all of the original fortifications, only a slender octagonal tower, known locally as the Candela, survives. Minerve (Occitan: Menèrba) is a commune in the Hérault département in Languedoc-Roussillon in southern France. It was the site of a ten week siege by Simon de Montfort during the Cathar Crusades, after which some 180 Cathars were burned to death at the insistence of Catholic Church leaders. The village was protected by a double curtain wall, and overhanging natural ledges; but this did not stop Simon de Montfort's crusader army. They set up four catapults around the fortification in 1210: three to attack the village, and the largest, called Malevoisine ('Bad Neighbour'), to attack the town's water supply. Viscount Guilhem of Minerve and the 200 men of his garrison could not resist for long. The defensive walls were breached by St Rustique's well, and Guilhem was obliged to negotiated the town's surrender. Minerve is located on above the River Cesse in a naturally strong defensive position. Near the village the river disappears underground in a large, natural tunnel. There are a few vestiges of the medieval castle remaining and some moving monuments to the Cathar martyrs.

Lake St Ferreol was created between 1667 and 1672 and is on the border of the Midi-Pyrenees and Languedoc-Roussillon regions. It is just a couple of kilometres south of Revel and west of Soreze at the foot of the Montagne Noire. The lake is situated in the middle of pine forest covering an area of 67 hectares, holding 6.5 million m³ of water and was originally built to supply the Canal du Midi and is now listed as a World Heritage Site. It now makes an excellent water sports centre, offering fishing, swimming, a beach with lifeguards during the summer season and many water based activities. If you don't want to get wet, there are various walks including an English style garden and arboretum that includes a series of waterfalls and a water jet spraying up to 30 metres high...

The Lampy-neuf dam which was completed in 1782 is the second water reserve for the Canal after the Saint Ferréol Lake. Construction of the dam was necessary to supply the Canal de la Robine between Narbonne and Port la Nouvelle. The dam and the lake constituted part of the extension of the ingenious system of the Canal du Midi, one century after it opened. On the edges of the lake, the Arboretum du Lampy tells the stories of the Fables de la Fontaine in their natural setting, surrounded by centuries-old trees....
