Castelnaudary is probably most famous for a 'peasant' dish of beans and various meats known as Cassoulet. It can take two days or more to prepare and is great comfort food for a chilly winter evening. The traditional cooking vessel is an earthenware pot from Issel called a cassole for which the dish is named. The ingredients include haricot beans grown in Pamiers or Lavelanet, duck confit, garlic sausage, pork, Toulouse sausage and mutton - but not necessarily all at the same time but a combination of several of them. If it's done absolutely to tradition, apparently is must be cooked in a baker's oven fired with rushes from the Montange Noire. In town you will find some fine old mansions, a restored windmill and an 18th Century semaphore tower. It is a real pleasure to spend a couple of hours in Castelnaudary having coffee or shopping for a picnic in the market. Today it serves as an important commercial centre for the rolling Lauragais farming country hereabouts, as it once was for the traffic on the Canal du Midi in the 17th century when agricultural and manufactured produce became easier to export to which it owed a period of prosperity. The Grand Bassin in the town at 7 hectares is the largest open area of water in the canal, and is today its major pleasure port. In fact, the most flattering view of the town is still that from the canal's Grand Bassin, which makes it look remarkably like a Greek island town, with its ancient houses climbing the hillside from the water's edge...

Created in the late '70s by damming the river Ganguise, this is a beautiful 280 hectare lake, which has become a centre for swimming, sailing, windsurfing, walking and wildlife. The attraction of 6 km of water, caused the Castlenaudary sailing club to move to the lake in the mid-80s. From their club on the western end of the lake, they now offer catamaran, sailing dinghy (Laser, 420 & 470), windsurfer, pedaloe and canoe hire. During July and August they also offer 5 day sailing and windsurfer courses. All around the lake there are beaches suitable for sun-bathing and swimming as well as a restaurant and a couple of bars...

La Ferme de Champreux prend place dans l’ancienne demeure du marquis de Champreux d’Altenbourg, un Toulousain originaire de Franche-Comté. En 1974, à l’occasion de l’aménagement du lac de Nailloux, Albert Bentaboulet a rénové cette ancienne demeure et l’a baptisée "La Ferme de Champreux". Au début, il a dirigé l’établissement avec son fils Patrick et sa fille Florence ainsi que Brice, puis il a fini par céder le restaurant à sa fille Amandine en 2013 . Lac de la Thésauque offers the opportunity to practice many leisure activities in a protected environment. You can discover the whole water and the surrounding flora via a footpath, by foot or by mountain bike, via the shore path (6 km). Canoes and pedal boats are rented by the campsite located on the lake. There are also tennis courts and a mini golf course. Fishing remains one of the lake's main attractions as the fish are many and varied. Unsupervised swimming is allowed...
