The Cabardès vineyard lies in the foothills of the Massif Central, called « the black mountain », 10 km from Carcassonne. The Cabardès, classified as an AOC (Appelation d’Origine Controlée) since 1999, is among the most reputed viticultural terroirs of the Languedoc Roussillon, both for the high quality of it's wines and their originality. Indeed, at only a short distance from the threshold of Naurouze (water divide), the transitional climate of the Cabardès associates the Mediterranean sunshine, to the rainfall of Bordeaux. Consequently, the Cabardès is the only appellation which mandates the cultivation of the “Mediterranean" grape varieties (Syrah, Grenache, …) alongside the traditional "Bordeaux" varieties (Merlot, Cabernet Sauvignon, Cabernet Franc, ….) in such even proportions (40% minimum in the final blend of each of the two origins).

The exceptional natural predispositions are not sufficient to elaborate great wines. It is the work of Man, through his passion, his discipline and his know how, which will transform and reveal that which nature puts at his disposition. This is what we strive to accomplish through each of the 3 stages which are the viticulture, oenological transformation, and maturation process. The vineyard was replanted with high densities: 6500 vines per hectare, while the average density in the region is of 4000 vines.

  The objective was to reduce the grape production per vine and to obtain a higher aromatic and qualitative concentration. Based on these efforts, a team of growers was trained to conduct the different operations of pruning, tethering, debudding, deleafing, selective treatments, in order to obtain healthy grapes harvested at perfect maturity.

The principle characteristics of our terroir are the following:

- The soil: the white limestone layers from 20 to 30 cm are crumbly, allowing the roots to exploit the underlying magnesium loam layers. As a whole, this provides bedrock which drains well after rainfall, but with a sufficient water reserve and a balanced fertility. This explains why, despite its arid, rocky appearance, this environment can gladly accommodate grape varieties which are demanding in water, such as Cabernet, Merlot and Syrah.

- The climate: The viticultural region of Ventenac associates the Mediterranean sunshine with the precipitations from the Atlantic. It is a transitional climate, which allows for the combined optimal conditions for cultivation of the vine, notably the adapted varieties which are the Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah and Grenache. This transitional location between the two climatic influences, in addition to its presence in the center of the corridor formed by the Pyrenees and the black mountain, brings about powerful winds, coming from the east or west, blowing through our vineyards and allowing for optimal sanitary conditions.

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

Bram

Bram

Bram is a commune in the Aude department in the Languedoc-Roussillon region in southern France. Bram is part of the old province of Lauragais, and is 790 km from Paris. The CD33 road to the village follows the Roman road, the Romans settling in the area because of a climate which balanced the warmth of the Mediterranean with the freshness of the Atlantic. In 60BCE, they began construction of Bram and called it Eburomagus. Roman remains suggest the town was less round than the current town. Eburomagus disappeared. The modern town was born in the 12th century, built around its fortress church. By the 17th century Bram had outgrown its walls and expanded in concentric circles...
