  With an outdoor swimming pool and a restaurant, this hotel is located in the village of Aragon, 12 km from the medieval city of Carcassonne. Free private parking is available on site. A.O.P. Cabardès  The domaine is found about 20 kilometers north of Carcassonne with its famous medieval walled city. Follow the D118 in direction of Mazamet. The domaine has produced just wine, for a very long time, even if the methods, vines and wines have changed. Of the 125 hectares of the domaine, 21 are vines, the rest being left to nature (heathland, forest). We are also planting more and more young olive trees to accompany the almond trees. It's not a diversification, the aim being aesthetic, reminding us that it is truly a mediterranean climate. The soil is chalky and often very stony. Find yourself amongst thyme, lavander and a few green oaks standing out above the vegetation. Vines are the only plants that can be cultivated in this soil and climate. the roots push their way through the fossils of marine molluscs to search as deep as possible for the water needed to resist the summer droughts, whilst the leaves capture the sun's rays to turn the sap into the sugary juice stocked in each grape. Not forgetting the winds, east and west, almost always present. The altitude too, (up to 300 meters), which brings a night-time coolness contrasting with the day-time heat, together favouring the ripening, and bringing porth wines with expression and finesse...

A.O.P. Cabardès A.O.P. Minervois Built under Louis XIII by Bernard de Pennautier, Treasurer of the States of Languedoc, Château de Pennautier (a historic monument) has been in the family since 1620. The vineyard has been entirely refurbished since the 1960s and the higher plots of land planted with vines. The direct heirs of the Pennautier family, Nicolas and Miren de Lorgeril are the 10th generation of winegrowers since the estate was founded. They took over in 1987. … and a terroir ! In the heart of the Cabardès appellation, the vines grow on the sunny, rugged hillsides south of the Montagne Noire, set at an altitude of 200 to 400 metres. The views from up there are breathtaking: at a glance, you can see the entire Pyrenean mountain range to the south, the Massif Central to the north, and the famous town of Carcassonne just a few miles away. This terroir combines clay-limestone soils,the Mediterranean heat, an Atlantic influence and the coolness of the mountains. Many areas of garrigue and rock on the Montagne Noire include vines, up to an altitude of 400 metres. - 46 hectares, with new grape varieties planted over the last 35 years, comprising 90 hectares AOC and 56 hectares Vin de Pays. - 21 hectares of Cabernet, 5 of Carignan, 6 of Cinsault, 22 of Chardonnay, 4 of Cot, 21 of Grenache, 36 of Merlot, 2 of Sauvignon, 26 of Syrah and 3 of Viognier: a stunning combination of grape varieties! - 6 kilometres north-west of Carcassonne. - 230 meter, this is the altitude of Pennautier, although its vines grow much higher up in the Cabardès appellation...
