You will cross the
ruisseau de la
Coume by wading, to go up the path that follows the gorges; there you will see the old mill "d’en
Julo". Some sheepfolds or "cortals" in ruins, a magnificent centuries-old
oak-green and finally, "Rocs Negres" and great views of the Pyrenees. Further, overlooking the
Cathar castle Aguilar, the signal tower "Del Far" and on the falaises de la Caune de l’Arago,
where the "Tautavel Man"
was found...
Take the Grand Rue, at the end take right rue de la Tonnellerie, then left the rue du Pont Romain. You walk along the cemetery (where stands the chapel of Our Lady of Health) to direct you to a road which leaves the village. You go up the river of Coume on its left bank, before crossing a ford
take the right path following the gorges where you will see the old mill on the river (Moli to Julo). |

You arrive in the vineyards on the plateau of Villarzel. After ca. 5 minutes you will to a ruined barn. At your right hand is shown a source.
You now borrow a path that climbs and will take you in 5 minutes to the last vines. Take the trail that goes to the left for 50 meters and then walking right at the hillside overlooking the vineyards. After 5 min walk at the height of a ruin, below right a beautiful centuries-old oak.
You arrive at "Rocs Negres." Magnificent views of the Pyrenees. Turn left to continue the loop. On this way back down you can admire the north of the castle of Aguilar, east of the Serre de Vingrau and the falaises de la Caune de l’Arago where is the cave in which was discovered the skull of Tautavel Man.
Southeast, you see the old signal tower, the "Torre del Far." You come back in the vineyard of Paziols. At the first intersection, turn left and then left again after 20 m along a large vine and arrive after 10 minutes at sheepfold to Marcot, partially ruined you get a magnificent view of the cliffs of the caune of Arago. Turn left. Now Start to descent to the village of Paziols...

I created "Domaine du Verdouble - Cucugnan" and settled in a private cellar in the city of Cucugnan, aware that I am the keeper of a rare and precious heritage: Terroir with exceptional wine qualities, unique historical environment, cultural environment actively supported by private actors and dynamic institutions. Although 80% of my vines are in A.O.P. Corbières, I have chosen the appellation Vin de Pays de Cucugnan for all my wines (including Corbières). Long used as a "subclass" of the AOP, the name "Vin de Pays" now once again witnesses the peculiarities of a terroir. Making a new wine means wanting to tell a new story. Cucugnan is the village of the story. From the top of the promontory, it watches over an exceptional site located in the heart of the wild Corbières, in the shadow of the Cathar castles of Quéribus and Peyrepertuse. Here it is nature that sets the pace and I, the winegrower, from pruning to harvesting, manage my vines while maturing my wines, carefully and without tricks. In this land of sun and wind, the grapes are harvested by hand, ripe and healthy. This is how natural wines are created, rich in the land and in the memory of mankind...

The Cathar Fenouilledes country train runs along a railway between Rivesaltes in the Pyrenees Orientales ans Axat in Aude, dignified heritage from the City of the South and a radial relationship between Carcassonne and Rivesaltes. Along the way you can see numerous and remarkable works of art as it winds its way through valleys and tunnels: Flirting languidly with the rivers Agly and Aude, it reveals the rocky countryside, sprinkled with vineyards on the mountainside, dominated by many notables sites (The Catlar Castle at Queribus, The Tour of Far, the relay station of froça real...) before reaching the forest at the end of an audacious railway journey...

Aguilar Castle stands on a rocky hillock at the foot of the prestigious Haut Fitou vineyard.
In 1210 it was invaded and occupied by Simon de Montfort, whose soldiers took and held the owner Raymond de Termes in prison in Carcassonne. Militarily, the castle lay dormant for the next 30 years, until Raymond's son Olivier de Termes took back the castle in the brief revolt against the young viscount Trencavel against the crusaders. Aguilar became the refuge of faidits, Cathar knights and lords dispossessed of their own strongholds.
Since 1949, it has been listed as a monument historique by the French Ministry of Culture.
Today it is in poor condition, and can be sited by the public. The design of the castle reflects evolving military thinking of the late Middle Ages. It consists of an inner keep built in the 12th century, surrounded by an outer pentagonal fortification from the 13th century. It is oriented so that its point guards the side most vulnerable to attackers. The keep and the inner hexagonal fortification is flanked at each corner by semi-circular guard towers, each with archery outlooks...

Downstream Padern, the cash is Verdouble again to cross a link of limestone from the mountain of Tauch, thus creating a site with magnificent gorges. Clinging to a rock, the castle ruins above the village. This castle is monitoring the Verdouble valleys and Torgan. In 899, King Charles the Simple Padern gives to the Abbey of Lagrasse. The medieval castle, there is nothing left. Yet Padern housed Occitan knights in rebellion to the King of France. Thus, Chabert and William Barbaira Peyrepertuse found refuge when they fled. The building was an element of protection and surveillance over the mesh in this terrotoire border. The current building is a building of the seventeenth century made by the lord Peter de Vic making the acquisition at this time. Access is easy by a small path that winds to the south...

Les Maîtres de mon Moulin overlooks the village of Cucugnan. It was restored in 2003 and began production in 2006. The flour it produces is used to make bread, biscuits and brioches on site. An oven adjoining the mill was built for the purpose. It is wood-fired, made of clay, and weighs more than 30 tonnes. A reception room for groups of adults and schoolchildren has been set up so that educational workshops can be organised. There is a windmill with sails, manufacture of bread, cakes and cereals and much, much more. Free tour of the n spending at least euros15 per family...
