Discover through our site, our two cooperatives located in the municipalities of Pépieux (Aude) and Aigues-Vives (Hérault), which merged into a single entity: Les Coteaux Du Minervois. Our growers work their land and cultivate their vines with passion and respect for the environment to provide you with quality products. You will find different wines from different cultures: Conventional and Organic Farming.
Les Côteaux du Minervois - Pépieux - Aigues-Vives
Wine is produced in both wineries with grapes of our 205 wine growers our vines cover 1500 hectares and stretch from Roquecourbe to Minerve passing through La Livinière and Cesseras. Wine is made from white grapes (sauvignon, chardonnay, Viognier and muscat) and red grapes (cinsault, syrah,grenache, merlot, cabernet sauvignon and cabernet franc) they are labelled under several classes appellation Minervois, cru la Livinière (a prestigious village wine) and vin d’Oc.

The cooperative has also created a cellar with barrels to age wines this adding complexity to the AOP Minervois and La Livinière. The cooperative has opened a new tasting cellar in Aigues vives on the road to the beaches between the tarn department and the Mediterranean sea this drawing in larger public.

  Specialties

Pépieux,
Nestled in the heart of the Minervois the cooperative winery was founded in 1951 largely due to the efforts of the village mayor Jean Gastou aided by his fellow vine growers the village was suffering from a crisis following 10 years of drought. A large number of vines had to be pulled up and the villagers were in difficulty. Pépieux had become a village up for sale as it was said in the local newspaper. Since, the cooperative and its members have continuously evolved, modernising their equipment, wine making and cultivating methods notably with the installation of irrigation.

Aigues-Vives,
Situated in the centre of the village surrounded by Minervois AOP wines, the cave was created in 1937 by Henri Tautil. Its bathes in a typical Mediterranean landscape with hills, pine woods small valleys and garrigues. In order to obtain the best from each grape variety, the cave has, over time invested in various new processes, like carbonic maceration, a centrifuging and rotative filtration. This evolution has enabled the cooperative to make quality wines of different types. A continuous effort to produce authentic wines with character has enabled the winery to move with modern tastes. The two wineries have now merged in order to combine their efforts.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...
