  Since 2011, Terri and Bernard Briqué, the owners, have been constantly making their clients happy in this beautiful 19th century building. This peaceful, quiet and picturesque place will allow you to enjoy market cuisine in a warm atmosphere. Influence of the local products and fresh seasonal arrivals are mixed together on a menu that changes every five weeks, for a result that is as beautiful as it is good on the plate:

Shrimps and Millas marinated in ginger and peppers, scallops with bacon on tagliatelle, Coq au Vin du coin, without forgetting the succulent Mille-Feuille au Chocolat or the Pear poached in rosé wine and spices... a whole programme that is more than tempting! The decor is a definite added value, with the checkerboard of vintage coloured tiles, the woodwork and the special care given to the decoration. We also like the bay window that allows us to observe the chef at work. Quality music in the background, and tea room in the afternoon to enjoy homemade pastries or homemade ice-cream. Even if the room is air-conditioned, you can always settle with the same happiness in the shade of the beautiful terrace in summer.   The village of Montolieu, which used to be fortified, stretches out on a rocky bluff between the steep valleys of the Dure and the Alzeau which join together to form the Rougeanne. Known for a long time as the ‘Church village’ making a living from the wool and cloth industry, Montolieu is now the ‘Village of Books’: A visit to the Conservatory of Bookmaking Arts and Crafts (Michel Braibant Museum) and the 15 bookshops, some of which are English, German or Spanish (OIT:04.68.24.80.80) as well as the different artisans applying their Bookmaking crafts and Arts will give you the opportunity to explore the old streets of the village. (vestiges of corbels showing Medieval origins, gothic windows ...). >> 2 roads can take you to Montolieu: the fastest leaving Carcassone is to follow the signs indicating Toulouse (RD6113) and then turn right after Pezens, towards Moussoulens on the D629 as far as Montolieu. >> The more picturesque road leaving Carcassone is to follow the signs indicating Toulouse (RD6113) and turn right towards Pennautier, go through the village and take the D38 towards Ventenac Cabardès then Moussoulens and the D629 as far as Montolieu. This road winds around the hills above the Valley of the Rougeanne...

Beautiful walk which is neither sheltered from the wind nor the sun. Rather steep climb on the first kilometer and smoothed over the next two. Signs in raw wood, hollow, indicating "Circuit Saint-Roch" will guide you all along, even if they are not very visible or legible ... Since October 15, 2018 and the floods a lot of land has been removed from the paths and many of them became very stony and rocky. But the circuit remains entirely feasible. The large car park is located at the bottom of the village, to the east, at the start of the Moussoulens road. (D/A) A road runs along the car park, itself bordered by a high stone wall. Take this road to the left and walk along the wall all the way. This road climbs quite steeply. Follow it to a path that climbs to the left and is signposted "Circuit Saint-Roch". (1) Take this path which goes up to the Saint-Roch chapel. Pass in front of the chapel and on the right go down by a motorable lane which, after two hairpin bends, will bring you back to the road. At this point, the tar gives way to a carriageway but stony. Take it to the left and climb slowly towards the plateau in the middle of low vegetation of boxwood and Kermes oaks...

The Château de Saissac is a ruined Cathar castle in the southernmost tip of the commune of Saissac in the Aude département in the north-west of Carcassonne, France. It was once the residence of the powerful vassal family of Trencavel. Today the ruins are protected as official historical monuments of France. Saissac is mentioned in a legal document (an Acte) from the Abbey of Montolieu in 958, and again in a text of 960. The village is typical of the Black Mountains and is built between the ravines of the rivers Aiguebelle and Vernassonne, just above their confluence. Things to see in the village include the porte d'Autan, a lavoire built in granite, a second covered lavoire and a fine echauguette. Vestiges of the city walls (enceinte) are still visible around the ancient village. These walls date from the Fourteenth century, the same period that the castle of Saissac was restored...

The Museum of Book Arts and Crafts is open throughout the year and offers a fascinating journey through the history of books, from the earliest writing and developments in writing media, right down to the invention of printing. Entering Montolieu, the magic begins.In the 18th century, Montolieu, a picturesque medieval village perched on a rocky spur between the Dure and Alzeau gorges, and the surrounding villages experienced economic prosperity with the textile and paper industries. Many mills were fed by the sometimes capricious rivers that flowed down from the Black Mountain. The rural exodus of the 19th century signalled the decline of the paper industry, the royal cloth factory and the agricultural and wine-growing industries. In the 1980s, a man, Michel Braibant, a bookbinder in Carcassonne, dreamt of reviving deserted alleyways...
