Le Toit Vert is a truly atypical place, a world where well-being, respect for the customer, love for cooking are paramount, let yourself be transported by Fabrice Fenoll, a passionate chef. Take a seat on the terrace with a breathtaking view of the castle or in the attractively furnished room, which is decorated with vintage objects. The menu changes regularly, almost weekly, depending on seasonal produce and arrivals.

Here are some examples of the spring menu Fabrice offers: local asparagus, soft-boiled egg, shavings of Parmesan cheese and Cécina de Léon or breaded foie gras with almonds, miso broth and poached oysters from Leucate as a starter and as a main course: spaghetti with clams, mussels and bottarga, lamb's lettuce juice or black mullet fillet from Port Barcarès, seasonal vegetables baked with anchovies and olives. For dessert, how about a cake of beetroot and caramelized orange, ginger syrup and combawa whipped cream. Each week, a local wine producer specially supplies a choice of their own wines to accompany the menu.
 What kind of imagination and what works in the plates, and it goes without saying that everything you taste here is of course homemade and that the cooked products come from organic producers in the region. We must also highlight a very good wine list with no less than 70 biodynamic references. A special address and an "extraordinary" chef who will not leave you indifferent...

A.O.P. Fitou A.O.P. Rivesaltes, Muscat de Rivesaltes  For more than 30 years, the Domaine de la Rochelierre in Fitou has applied the Cousinié method to its 15-hectare vineyard. This method consists of using only organic and mineral materials to concentrate with "respect for the living". A lot of soil is added with more than a dozen plows per year, so that the roots go deep and the stem is less sensitive to temperature and hydrometric variations. Regarding the harvest, the Fabre family harvest the grapes by hand, and at the best moment of ripeness, so that it gives a very interesting balance. Nowadays, Jean-Marie and Emilie Fabre vinify their entire production in stainless steel barrels, so that the best fermentation can be managed and maximum aromas can be preserved. The wines are then, according to the cuvées, either grown in barrels to preserve all youth and the purity of the aromas in barrels, with the aim of allowing the tannins and aromas to mature in order to achieve more faster roundness...

For agriculture, this truth means that we must farm our land without damaging it; we must create an equilibrium between what we take from the land and what we give to it; we must understand and resprct the rules of the earth and the cosmos. For wine growers, what we give to the land must be this: first of all we must break with the habit of monoculture and ensure that our soil is teaming with life; we must keep ourgrowing areas on a human scale; maintain or create a rich tapestry of plants so that a variety of flora will encourage an equally varied fauna, enrich the soil in a responsible way, caring for its micro- and macro-organism; in short: do all we can to ensure that vines, as a product of the soil, are anintegral part of the natural biological cycle. This will allow our vines to develop the highest level of natural resistance without using any chemical products. Avoiding chemicals means doing much more manual work: hoeing, pruning and treating each vine with our natrual infusions of nettle, camomile, and other herbs. For the greatest concentration of aromas and to preserve the unique character of our terroir, each vine needs individual attention: removing some leaves, side-shoots and excess groth and, with some grapes such as Mourvèdre, even reduce the number of grapes. There is nothing new about cultivating vines in this way. We are simply returning to long-standing traditions, some of which have almost been fogotten because chemical pesticides, mechanisation and convenience led winegrowers to neglegt them. Although the importance of these traditions has always been understood in vineyards where quality comes first. We continue with this "new-old" approach in our cellar...

La Franqui and its beach of Les Coussoules with 5 miles of fine sand has a claim to be the oldest seaside resort on the Languedoc coast. In the past it was a port of call for Phoenician and Roman galleys, today la Franqui is a Kingdom of kiteboarding, windsurfing and landsailing. Every genuine beach or seaside resort has been granted an exceptional location by the gods. La Franqui is no exception. The oldest seaside resort on the Langudoc coast nestles in a pine forest that backs onto the rocky plateau of Cap Leucate, at the foot of the only cliffs that exist between Marseille and Port-Bou. Fronting the resort is Coussoules beach with its 5 miles of fine sand that stretch lazily from la Grande Bleue to l’Etang de la Palme. As a backdrop, there is la Clappe massif, Mount Saint-Clair and Canigou peak. The array of colours is striking: the cerulean blue of the sea, the murky green of l’étang (lake), the golden yellow sand, the dazzling white of the cliffs and the green of the scrubland. Who could ask for more? The area was frequented formerly by Paul Gauguin, then by Charles Trenet and today by Jérôme Savary. This tiny resort which is a locality in the district of Leucate has managed to escape the ravages of concrete and modernity...

A botanical garden created in 1991, set in an outstanding, wild "garrigue" landscape - the typical scrubland of the south. The garden covers 7.5 hectares and is made up of three parts. The arboretum has more than 300 species of trees, shrubs, palms and conifers - 2,500 trees have been planted here. The cactus rock gardens have around 8,000 plants (including 1,300 different species). The Mediterranean zone has about 340 species. It is one of the largest collections of ground-planted cacti and succulents in France and also boasts a collection of agaves...

The site of Tautavel Cave (also called Caune de l'Arago) is an ancient karst cave in the Tautavel valley of France with over 35 feet of deposits containing over 40 very old stratified occupations, dated between 450,000 and 100,000 years before the present. Stone tools and faunal remains have been found in abundance. The oldest layers include several bone and bone fragments of several individuals of the so-called Tautavel Man, called Homo erectus tautavelensis. Port Leucate is a small port located in the South West of France in the Langedoc-Rousillon Region. The Port is formed on a small strip of land that has the Med Sea on one side and a Lake (L'Etang) on the other, with the Mountains in the background. The village of Leucate is situated about 4 miles to the North of the naturist village. Take the cycle paths for the short journey into this vibrant village. Leucate has a number of bars & restaurants which are open throughout the year. The weekly market is on a Thursday morning. The local Vignier will be happy to sell wines from the local co-operative to the finest the Fitou region has to offer. Port Leucate is situated a couple of miles to the South. Port Leucate is larger than Leucate Village and surrounds a large marina. You can sit in one of the many harbour-side bars and look out over the mix of local fishing boats and luxury yachts. The market in Port Leucate is on Sunday morning...
