Castelnaudary
of 12,000 inhabitants, still hesitating between modernity and
tradition, is known throughout the world as the undisputed capital of cassoulet.
She knew not to let herself be devoured by the giant from Toulouse nor by her
big neighbour, Carcassonne, a prefecture town. His secret? Local anchoring.
Here, one belongs to the lauragais country before feeling audacious.
The landscape is strongly marked by the Cathar epic and the great cereal producers. Here, the oval ball supersedes the round one. The Monday morning market is an institution, just like the summer ones, on Thursdays from 7 to 11 pm, from mid-June to mid-September, in Castelnaudary or in one of the surrounding villages depending on the week, they gather about a hundred exhibitors of local products and arts and crafts...

The Seuil de Naurouze, or Col de Naurouze, is the highest point (190 m above sea level) of the Canal du Midi in southern France. It is the watershed point identified by Pierre-Paul Riquet when he designed and built the canal. Water falling on the western side of this point flows to the Atlantic Ocean and on the eastern side to the Mediterranean Sea.
It is on the border of the department of Haute-Garonne and the department of the Aude. In 1827, the heirs of Riquet built the Riquet Obelisk. The obelisk has a dedication: "To Pierre-Paul Riquet, Baron Bonrepos, author of the Two Seas Canal in Languedoc".
It is erected near the site of the former octagonal holding tank, called the Bassin de Naurouze created during the building of the Canal du Midi.
The flow of water from the Bassin de St. Ferréol joins the Canal du Midi at this point.
Montferrand is a Lauragais small village with less than 450 inhabitants where the natural watershed of the Canal du Midi lies...

Both the Romans and Leonardo Da Vinci already had the idea of creating a river connection between the Mediterranean and the Atlantic Ocean. However, there was always a problem. For example, a way had to be found to overcome the 194-meter-high Seuil de Naurouze ridge. Over the centuries, the pressure increased. A canal had to be built so that the ships of the French fleet would not have to make the 2000 kilometer detour around enemy Spain. A canal connecting the Atlantic to the Mediterranean would not only be a huge time saver. They also avoided difficulties with the Spaniards. In the end it was an engineer from Béziers named Pierre-Paul Riquet who came up with the idea of diverting another river that originated on the ridge, the so-called Fontaine de la Grave. This would give a canal sufficient water supply, so that a canal could be dug around the ridge. King Louis XIV was aware of the canal's economic, political and military interests, which led to the construction of the Canal du Midi in 1666. Tens of thousands of workers worked for 14 years on the 328 structures that the Canal du Midi has, such as bridges, aqueducts and basins. The canal was completed in 1681. Pierre-Paul Riquet was never allowed to view the channel in its entirety. He died a year before delivery. The Canal du Midi has been a UNESCO World Heritage Site since 1969. The economic importance of the canal has since been minimized because commercial inland shipping has largely disappeared. Along the canal are several towns, monuments and harbors that are worth a visit. A nice experience is to explore the canal by boat, but a nice walk or bike ride along the Canal du Midi is also highly recommended!

Surrounded by sunflowers and poppies. The town of Revel, which is in the east of the Haute-Garonne department of south-west France, is a market town lying on a flat plain, resplendent in early summer with sunflowers and poppies. Corn and garlic are also grown here, agriculture being a dictator of the changing seasonal landscapes as always in rural France. A market town par excellence! Its Saturday extravaganza truly is a superb example of a French general market at its very best. Revel has a huge Saturday morning market which is attended by both locals and visitors, some of whom have travelled considerable distances to savour the atmosphere and the goods on offer here. The hub of the market, the food and fresh produce stalls, are situated in the central market square, which is a gorgeous covered arcade, typical in its bastide styling, yet more beautiful than most. The market spreads out around the town, but the heart is most definitely here in this very traditional square...
