An old workshop for marble builtup against the medieval ramparts of the village, a garden at the end of a narrow street nestled in the heart of Caunes Minervois, a beautiful bergerie overlooking the Argent Double river and the Pyrenees off in the distance, made me dream. Here there is not a long family tradition: every thing is to be invented.

A winery on two levels, a small, shady tasting area, a naturally cool cellar with oak barrels for aging the wines, taking form little by little in what become at the same time aplace of work and a place for living. The vines of Clos du Marbrier are situated in the magnificient "terroirs" of Félines Minervois and La Livinière in the foothills of the Montagne Noire at 400 meters altitude.

While stroling the lanes of the village on the path marked by the ceramic lizard, you will not miss passing the Clos du Marbrier. Tasting the wines and visit the winery rather by a appointment.

Our grape varieties are : Aramon, Carignan noir, Chenanson, Cinsault, Grenache Noir, Mourvèdre, Roussanne, Syrah

The diversity of grapes varieties (7) and the variety of soils (limestone,shale and sandstone) permit a search for a beautiful complexity.

The harsh climate adds its temperament to the wines. Rigourous agricultural methods, respect for the environment, grape perfectly ripe, complete this harmonious approach to wine making.

The "didascalies" are, in the theatre, the author's notes written in the margins ofthe text. We have made these first wines taking into account the precious thoughtd and advices from our winemaker friends, who are themselves "authors" of some beautiful wines in this Languedoc which is so dear to us.

These are wines of an amateur in true sense of the term. We have put a little "savoir faire", lots of passion and the wonderful energy of an adventure which has only just begun.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic growers use no synthetic growth-regulators (such as Alar). As for not using pesticides, the organic alternative is to encourage natural predators of insect pests instead of using poisonous insecticides. Organic farmers promote "biodiversity" and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil. In wet climates the main difficulty is raised by the use of copper sulfate against mildew, which leaves over time levels of copper in the soil that need to be monitored....

Located just down the hill on the main street, inside this is the local bar, while outside is a gathering place for tourists. A morning coffee can be fun. Buy the pastries across the street at the boulangerie, then order coffee. There's no problem with eating breakfast that you've purchased elsewhere, because the Grande Fontaine doesn't sell pasteries. An omelet and salad at noon can be very enjoyable and inexpensive, and full meals are available both at noon and in the evening. Reservations not normally necessary...

One of my favourite places in Caunes Minervois is La Cantine du Cure in the shadow of the Abbey. There is always a friendly face to welcome you and a little music keeping you company in the background. The staff are friendly and helpful and attentive and will assist you with your choice of fare - there is normally a choice of 3 or 4 tapas for €5 and perhaps 4 plats du jour (plate of the day)for €10 and normally ice cream for dessert.....

Bar a Vins - Restaurant, La Table des Vignerons "Domaine Tour Trencavel" in the renovated Bureau of the old Cave Co-operative building. They serve well constructed meals, menus with choices & a la carte served with very reasonabley priced local wines. The warm welcome of the bosses, the decor classy and sober, daily menu renewed every day, garden products ... and the wine list at very reasonable rates. The gourmet menu (starter, main dish and dessert) is a feast! Opportunity to purchase wines from areas at the end of the meal. An address that we will refile word of mouth....
