Since the takeover by Yann and Marjorie of the Bel Minervois, there has been a wind of innovation. The highlight of this establishment is undoubtedly its shaded and walled interior terrace where you will settle in as soon as the sun comes out. In the kitchen Yann offers us a creative cuisine of quality where local and fresh products have a very beautiful place. The plates are well presented and whether you are meat or fish, you will find your happiness in the menu that follows the seasons. As a starter, we chose the roll of smoked salmon, fresh peas, ricotta with herbs.

Minervois

A.O.P. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

On the border between the Aube and the Herault, in the middle of the Minervois vineyard, this medieval village is perched on a rocky outcrop that overlooks the Cesse and the Brian rivers. Its elevated location made it, during the Cathar wars, a refuge for heretics after the sack of Beziers in the beginning of the 13th century. The town has preserved its old stone buildings from that time. The quickest way to get to this Cathar village is the D15 highway. You will not be disappointed, as Minerve has a lot to offer. In fact, it is listed as one of the “most beautiful villages in France”. Park your car outside the village, and take a tour on foot to see these wonders up close. Right away, you will see the remains of a medieval castle from the 13th century. Not far from these remnants, at the top of the village, you will see the church of Saint-Etienne that dates from the 11th century. This religious building in the Roman style houses an altar that was likely built in the year 456. Finally, admire the natural bridges dug out by the canyons of the Cesse and the Brain, or the old ramparts that have been completely restored...

The Dolmen des Fades is surrounded by a forest of pines a little away from the road on a hill at a place called "Morrel de las Fadas", which means in Occitan "Slope of the Fairies." The monument is the biggest dolmen long hallway (previously covered walkway) in the south of France. It was built, according to the archaeologists ca. 3500 BC (late Neolithic) by the people of la culture the Véraza: the remains of this culture were first found in 1903 at this place after plowing of the terrain and then in 1946 after meticulous excavations by Odette and Jean Taffanel a necropolis of the "Champs d'Urnes" revealed. They found include a dagger with brass rivets, a very original piece in the Olonzac Museum where it is stored. From Pépieux direction Minerve (take D 206), and after 2 km, at the area of Mignarde, take the first left (D 168); The Dolmen is shown on the left at km. It stands on a hill planted with pine trees, where you have a beautiful view...


La livinière

La livinière

La livinière is an old wine village with 600 inhabitants and is located in the well-known and beautiful wine region of Languedoc, including the cities of Montpellier, Carcassonne and Narbonne. Many of our fellow residents live from wine-growing. La Livinière has a grocer, a bakery, a doctor a pharmacy, a restaurant and of course several châteaux, where you can enjoy and taste delicious and often awarded A.O.P. wines. Olonzac is a larger village a few minutes away, for your visit to restaurants, larger shops or pleasant terraces and the market on Tuesday morning is also worth a visit. The rural La Livinière is located at the foot of the Montagne Noir. An area with a lot of natural beauty, where you can walk, cycle, picnic for hours, or swim in the crystal clear streams and rivers that have made their way through imposing rock faces...

Lézignan-Corbières is a very active town, located along the main road between Narbonne and Carcassonne. The town has plenty of shops and cafés and so makes a good place to stop for a lunchtime visit. The main attraction, though, is the Wednesday market which is very large and packs the town with market stalls, people, odors (of the good sort) and activity. Lézignan-Corbières isn't a particularly attractive town, and we found the narrow streets of the "old town" rather dreary. The main church of Lézignan-Corbières, Eglise Saint-Félix, is an imposing structure. Declared an historical monument, it's located in the center of town and has a small park just beside. Market Wednesday The Wednesday market is a really big affair in Lézignan-Corbières. The market stretches around the south side of the old town, packing the main Cours de la République and most of the adjacent side-streets. There are very many clothes and food stalls, and all are popular. It was fun to observe which vendors had the best reputation by the bigger crowds packed around the more popular vegetable and food stands....

L'Oulibou is a fascinating place to visit. Only 3.5 km from Mailhac, it produces some award winning oils and olives which can be sampled in the very mill where they have been made. You can also see the whole process that olives go through in order to make them into a wide variety of oils. The 'lucque' is one of the main olives of the Languedoc Roussillon area and it under goes some magical transformation within the walls of this traditional mill. 2 kilometres from Bize, just off the main road between Beziers and Carcassonne, you will find l’Oulibo, a cooperative that produces some of the best olives and olive oils in France. Bize is part of the Minervois region that includes the village of Minerve 10kms to the north which was the site of a famous siege by Simon de Montfort and the consequent martyrdom of the Cathars. Nearby are Beziers (35 minutes) and Narbonne (25 minutes) with cathedrals, excellent markets, shops, museums, and much more...
