Philippe Bodin,
After 35 years of service to the high-end restaurant as a chef in a Companionship initiation, Philippe Bodin converts in raising dairy goats. With BPREA (Professional Operating Officer Agricole Patent ) in his pocket, he moved into a mode of reasoning rustic farming, in a full cereal territory. He raises his goats to milk production that he transforms itself in his laboratory at Domaine de la Leude Bram. It is in "direct producer" in collaboration with his wife Fabienne, he markets its dairy products and farm products (cheese, butter...). In continuation of this breeding activity (stopped at today), "La Table Fermière" is created for you to discover its culinary expertise and knowledge of local products.

Some travelings abroad and an atypical career allow Fabienne to be a thoughtful hostess with guests. The meeting with Philippe, her husband, led her to join the followers of Epicurus. For her, as for Philip, all dishes, wine has a great story to tell. In the warmest ambiance of their home, Fabienne and Philippe will share with you these few annecdoctes that make French cuisine full of surprises. Authentic dishes, prepared with fresh products, for the most part by local producers, are served in the finest tradition of Audian peasant customs. Fabienne will make you discover the flavors of yesterday, the most classical dishes of the peasantry to the forgotten dishes whose recipes have survived to arrive in your plates .... let you discover peasant food!

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

  This little walk of an hour is suitable for the whole family. The path leads along the four castles and the Belvedere with its beautiful views. Walk is doable and marked and starts in Lastours. In the heart of the Montagne Noire, 15 km from Carcassonne formed four medieval castles the castle of Cabaret. The site is strategically located on the road from Narbonne to Spain. The castles have been included since 1905 in the list of Historical Monuments. The oldest known remains date back to the Bronze Age, around 1500 BC. In a cave has been found the grave of a girl nicknamed "Princess with the necklace". Her body was covered with objects including amber beads and jewelery from the Mycenaean and Egyptian art. Since the Middle Ages, Lastours is an exceptional property which is built at 300 meters altitude, on top of a rocky promontory. For the Crusades against the Cathars, there were three castles on the site of Lastours (Cabaret, Surdespine and Querthinheux), but under a different form than what they look like now...

Saissac

The Château de Saissac is a ruined Cathar castle in the southernmost tip of the commune of Saissac in the Aude département in the north-west of Carcassonne, France. It was once the residence of the powerful vassal family of Trencavel. Today the ruins are protected as official historical monuments of France. Saissac is mentioned in a legal document (an Acte) from the Abbey of Montolieu in 958, and again in a text of 960. The village is typical of the Black Mountains and is built between the ravines of the rivers Aiguebelle and Vernassonne, just above their confluence. Things to see in the village include the porte d'Autan, a lavoire built in granite, a second covered lavoire and a fine echauguette. Vestiges of the city walls (enceinte) are still visible around the ancient village. These walls date from the Fourteenth century, the same period that the castle of Saissac was restored...

Eburomagus, the House of Archaeology is located in the heart of the village of Bram. It houses a permanent exhibition section together with an temporary exhibition area. The House of ogy presents 6 themes showing the wealth of the archaeological heritage of Lauragais from the prehistoric period to the middle ages. These include everyday life, exchanges, funeral rituals, etc. But it is the period of Roman antiquity that is of the greatest interest in view of the importance of the "Vicus Eburomagus", especially in relation to its pottery workshops....

Castelnaudary is probably most famous for a 'peasant' dish of beans and various meats known as Cassoulet. It can take two days or more to prepare and is great comfort food for a chilly winter evening. The traditional cooking vessel is an earthenware pot from Issel called a cassole for which the dish is named. The ingredients include haricot beans grown in Pamiers or Lavelanet, duck confit, garlic sausage, pork, Toulouse sausage and mutton - but not necessarily all at the same time but a combination of several of them. If it's done absolutely to tradition, apparently is must be cooked in a baker's oven fired with rushes from the Montange Noire. In town you will find some fine old mansions, a restored windmill and an 18th Century semaphore tower. It is a real pleasure to spend a couple of hours in Castelnaudary having coffee or shopping for a picnic in the market. Today it serves as an important commercial centre for the rolling Lauragais farming country hereabouts, as it once was for the traffic on the Canal du Midi in the 17th century when agricultural and manufactured produce became easier to export to which it owed a period of prosperity. The Grand Bassin in the town at 7 hectares is the largest open area of water in the canal, and is today its major pleasure port. In fact, the most flattering view of the town is still that from the canal's Grand Bassin, which makes it look remarkably like a Greek island town, with its ancient houses climbing the hillside from the water's edge.
