After a tasting and a few photos of the barrel cellar, you will take your place on the terrace under the pergola, at the first rays of the sun, or in the superb room, with its high ceilings, decorated with beautiful beams, marked by a soft atmosphere warmed by the crackling of wood fire in winter. In the kitchen, Franck Debethune officiates, and offers you a seasonal cuisine, with revisited classics of Mediterranean cuisine, based on fresh products. We eat on the slate, and it is with indecision that you will choose between rolls of duck breast with pesto, cucumber gazpacho with mint mousse, low temperature poultry supreme and chorizo juice, duck breast with apricot sauce, to finish with baba with Pennautier's dream or chocolate praliné ingot.   At 100 meters from the castle, in an old, completely renovated barn, between terrace and fireplace, the restaurant and shop (350 square meters in total) are sober and elegantly furnished in a beautiful setting. The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

A.O.P. Cabardès A.O.P. Minervois Built under Louis XIII by Bernard de Pennautier, Treasurer of the States of Languedoc, Château de Pennautier (a historic monument) has been in the family since 1620. The vineyard has been entirely refurbished since the 1960s and the higher plots of land planted with vines. The direct heirs of the Pennautier family, Nicolas and Miren de Lorgeril are the 10th generation of winegrowers since the estate was founded. They took over in 1987. … and a terroir ! In the heart of the Cabardès appellation, the vines grow on the sunny, rugged hillsides south of the Montagne Noire, set at an altitude of 200 to 400 metres. The views from up there are breathtaking: at a glance, you can see the entire Pyrenean mountain range to the south, the Massif Central to the north, and the famous town of Carcassonne just a few miles away. This terroir combines clay-limestone soils,the Mediterranean heat, an Atlantic influence and the coolness of the mountains. Many areas of garrigue and rock on the Montagne Noire include vines, up to an altitude of 400 metres. - 46 hectares, with new grape varieties planted over the last 35 years, comprising 90 hectares AOC and 56 hectares Vin de Pays. - 21 hectares of Cabernet, 5 of Carignan, 6 of Cinsault, 22 of Chardonnay, 4 of Cot, 21 of Grenache, 36 of Merlot, 2 of Sauvignon, 26 of Syrah and 3 of Viognier: a stunning combination of grape varieties! - 6 kilometres north-west of Carcassonne. - 230 meter, this is the altitude of Pennautier, although its vines grow much higher up in the Cabardès appellation...

Both the Romans and Leonardo Da Vinci already had the idea of ​​creating a river connection between the Mediterranean and the Atlantic Ocean. However, there was always a problem. For example, a way had to be found to overcome the 194-meter-high Seuil de Naurouze ridge. Over the centuries, the pressure increased. A canal had to be built so that the ships of the French fleet would not have to make the 2000 kilometer detour around enemy Spain. A canal connecting the Atlantic to the Mediterranean would not only be a huge time saver. They also avoided difficulties with the Spaniards. In the end it was an engineer from Béziers named Pierre-Paul Riquet who came up with the idea of ​​diverting another river that originated on the ridge, the so-called Fontaine de la Grave. This would give a canal sufficient water supply, so that a canal could be dug around the ridge. King Louis XIV was aware of the canal's economic, political and military interests, which led to the construction of the Canal du Midi in 1666. Tens of thousands of workers worked for 14 years on the 328 structures that the Canal du Midi has, such as bridges, aqueducts and basins. The canal was completed in 1681. Pierre-Paul Riquet was never allowed to view the channel in its entirety. He died a year before delivery. The Canal du Midi has been a UNESCO World Heritage Site since 1969. The economic importance of the canal has since been minimized because commercial inland shipping has largely disappeared. Along the canal are several towns, monuments and harbors that are worth a visit. A nice experience is to explore the canal by boat, but a nice walk or bike ride along the Canal du Midi is also highly recommended!
