Synonymous with elegance and class, 'La Perle' also refers to the famous painting "The girl with the pearl" by the old Dutch master Vermeer. This, with a nod to the Dutch origins of the young talented chef and his family. In "La Perle du Domaine Michaud" you will be presented a menu mainly inspired by the French cuisine, with a subtile Dutch touch, while the chef keeps in mind the respect for the environment and responsibility towards our planet.

Our restaurant finds itself in the Languedoc-Roussillon, one of the oldest wine regions of France. While vineyards of the Corbières, Minervois, Cabardès and Malepère meet at the city of Carcassonne, the first sparkling wine of the world, Blanquette de Limoux, saw the light a little more southwards. ​ In our restaurant we want to make you acquainted with fabulous wines from the area. That is why the surprising but relatively unknown wines from the Malepère, the ‘Benjamin’ of the Languedoc, occupy a prominent place on our wine list.

Menu:

Prepared from fresh ingredients that have not travelled all around the world before being presented on your plate, our chef offers a gourmet menu that changes with the seasons. Carefully prepared dishes mainly inspired by French cuisine with a subtle Dutch touch. To avoid disappointment and / or misunderstandings, we kindly ask to let us know, in advance, if there are any allergies or dietary requirements that we should take into account prior to the meal...
  Outdoor:
On beautiful summer days, our park garden with breath-taking view over Carcassonne, offers the perfect place to enjoy an aperitif before going at table which has mostly been prepared on our south-facing terrace with unique view over the Corbières mountains and the peaks of the Pyrenees.

Indoor:
While on the cooler days our recently renovated restaurant offers a salon with cosy seats near the its authentic fireplace and large windows with view over the city, before you can will join your table in our stylishly decorated dining room.
 
Sandor Danen
As a child, he already knew he wanted to become a chef. Which he never has regreted. ​ During his 4 years of studies in « Cuisine & Pâtisserie », Sandor has not only obtained a very honorable 4th place at the «Trophée Marcel le Servot» in the kitchens of the Palais de l’Elysée, but has also been chosen to represent France in « les Olympiades de Cuisine » in Hungary. ​ After internships in, among others, the Michelin starred restaurants of the **chef Franck Putelat and ***chef Christophe Bacquié, he decided to pursue his own ideas and took over the kitchen from Domaine Michaud at the age of 18 years only. Ever since, he is proud to be among the “Top 3 of best restaurants in Carcassonne“, thanks to guest experiences shared on TripAdvisor as well as within “10 Best Restaurants in Carcassonne”, as selected by Culture Trip. Furthermore he has been successfully nominated for the “Restaurant & Bar Awards 2018” organised by LUX Magazine. '

Aided and abetted by the use of harmless pheromones to replace insecticide sprays, we rely on a happy combination of altitude and prevailing brisk, dry winds to keep unwanted pests at bay, in the most natural way possible. A.O.P. Malepère   The first owners of the castle, Andrew and John Cointes, consuls of Carcassonne in 1646, gave their name to the domain and the locally produced wines: Château de Cointes (Côtes de la Malepère) - Domaine des Consuls (Vin du Pays des Cotes de Prouilhes). It was in 1987 that Francis and Anne Gorostis settled on the family estate. Their close family relationship and their passion for good wines has made them decide to resume the exploitation of Paul and Clémence, the grandparents of Francois. Anne and Francois now manage the vineyard. In 1923, when the grandfather of Francois bought Chateau de Cointes, the production of the domaine was fueled by the trade. Gradually the Mediterranean and Bordeaux grape varieties were introduced. Anne and François Gorostis have constantly endeavored to enhance the expansion of re-planting with investments in the vinification method and preservation techniques. Half of the production is sold to wine merchants and the other half is exported to Northern Europe and Asia. Since 1995, the wines of Château Cointes are regularly rewarded at the Concours Général Agricole in Paris.
