This 16th century castle is situated on a large plot of land on the banks of the river Aude. The old fortress turned hotel restaurant subtly combines medieval tradition with modern comforts and it has an excellent restaurant (it is important to reserve a table in advance).

Authentic atmosphere in a renaissance setting!

The castle was built by Jean de Joyeuse, first Governor of Narbonne and Lieutenant General in Languedoc, between 1540 and 1550, and his son, Guillaume III, took over the task of completing this beautiful castle after his death.

Its inventive cuisine is a subtle blend of tradition and modernity, for example, the croustade of green asparagus and fresh goat cheese of Bugarach and its grilled cansalade, green vinaigrette; the hake back as a Viennese with chorizo and potatoes gnocchi and seasonal vegetables or the Catalan lamb declined with Oriental, mint beans and mashed chickpeas, reduced juice... to be enjoyed in the vaulted dining room or outside in the courtyard... the Dukes. It goes without saying that this is a place of prestige, ideal to immerse yourself in the history of the Cathar country, during a meal or even better, during a stay in one of the castle's rooms...
 Large room, medieval decoration, divided in two dining rooms by a central chimney; the tables are well dressed with white table clothes; the service is friendly, attentive and professional. Arnaud Villiez, the Chef, and his team prepare with passion and precision dishes based on local products with respect of the seasons, such as Catalan lamb, organic trout from the country ... everything is homemade.

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOP to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOP Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....

History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables. Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone....

Puivert Castle, locally known as Château de Puivert, lies near the village with the same name, west of the town of Quillan in the Languedoc-Roussillion region in France. Of all the Cathares castles, Puivert Castle certainly is one of the best preserved. It was built in the 14th century. With its 35 meters high keep in which four splendid rooms are superimposed, its 6 towers incorporated in its enclosure wall, this castle dominates the old glacial lake of Puivert below. One of the rooms in the keep has very nice carvings of 8 characters with medieval musical instruments on its walls. You can climb to the top of the keep which offers a great view on the Quercorb plain to north, to the west of Montségur Castle with the summits of the Pyrenees behind it and to the east of the peak of Bugarach...

Deodat Roche, founder of the Cahiers d'Etudes Cathares and a twentieth-century magistrate of Limoux and Carcassonne who was removed from his position by the Vichy government for his interest in religion and spirituality, wanted to lay bare to his contemporaries the light which the Cathars had tried to reveal to the medieval world. A self-proclaimed neo-Cathar, Roche believed deeply in the need to uncover the true history of the Cathars, which had been obscured by an intolerant medieval Church. His house is the location for a permanent exhibition devoted to Catharism and its interpretations...
