The hotel is composed of twelve rooms all with bathroom and situated in an annex building.. Since the morning, when the sun shines you can enjoy a very beautiful swimming pool, with an impregnable view on the valley. The after noon maybe composed of the castles cathares visit, or of the numerous monuments of the region, of a rest around the swimming pool, or of walks to bicycle. In the evening, after having tasted the famous "Cartagène", soft wine of the region, a complete dinner will be served you, an inspired meal of the regional kitchen, watered of a good local wine of the Minervois or Cabardès...
  Specialities

Stephan Dupont the landlord of this castle of the 16 th century you welcome of April to October in his magnificent home, restored admirably and situated to 35 km to the north of Carcassonne, in the Black Mountain, to Pradelles Cabardès (812 m of altitude).

The hotel has 12 rooms, all situated in a recent building near the main house. All rooms are equiped with lavabo - shower - WC.

Restaurant;

All bread, croissants, chocolat bread, cakes are home made ! We propose you every evening a dinner made of fresh saison local products ! Residents of the hotel can take lunch.. For non-residents, we recommand a reservation. If you are going out for the journey we can prepare your pique nique..

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

Discovered in 1811, the cave, carved by a river has been electrified and fitted in 1935. However, it was modernized in 1973 to its current appearance. The eighth and final room contains a unique mineral formation, a chandelier of aragonite to 4 meters high and 10 meters in circumference, a real treasure....

Why an exhibition of Occitan Catharism in Mazamet? Catharism, dissident religion of the Christian faith, considered to be a heresy by the all-powerful Catholic Church, was condemned, and its adepts were persecuted. The Cathars were obliged to flee into remote areas and found refuge in the Montagne Noire : at the edge of the Aude Cathar Country. The Tarn side of this mountainous massif constituted a place of refuge and resistance for this religion. Hautpoul, the historic birthplace of Mazamet, ancient castrum (fortified village) perched on a rocky outcrop, served as a retreat during the period of the Inquisition. It was also one of the places of residence of the Cathar Archbishop of the diocese of Albi in the 13th century. This Medieval village is one of the rare vestiges of the Cathar time to be situated on the Tarn side of the Montagne Noire...
