The history of Grotte de Limousis goes back to the mists of time. It was a shelter under the rock used by both prehistoric men and Cave Bears. It has always been a refuge for men.

Fancy a bit of freshness? We invite you to discover the cave Limousis, 20 kilometers northeast of Carcassonne and penetrate into the bowels of the earth.

Discovered in 1811, the cave, carved by a river has been electrified and fitted in 1935.

However, it was modernized in 1973 to its current appearance.

The eighth and final room contains a unique mineral formation, a chandelier of aragonite to 4 meters high and 10 meters in circumference, a real treasure...
  Specialities

Aude - D 511

This cave dates back at least to the Neolithic Period, when it was inhabited by man. It was also used in Roman times and in the Middle-Ages. The cave was formed from limestone in the primary era, and hollowed out by an underground river.

The Chandelier room is quite famous in the region. Equally important are the numerous stalactites, stalagmites, draperies, discs and pendeloques. The cave also has remains of cave bears, as well as an underground lake.....

Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...


Cabardès

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

One lunch time here, the main dining room had been converted to a huge table seating several dozen French men and women in their 70s and 80s, plowing through huge platters of food and liters and liters of wine. Club 620 - Fontiers-Cabardès



A small village bar-restaurant where you eat well, without fuss. Traditional dishes and a varied menu. Yvan Marié, the owner, likes to work stews. Diners are treated to a good stew, a Burgundian, a coq au vin or a good onion soup in the winter, grilled over a wood fire as the breast and large salad as 620 with the gizzards, sliced foie gras and pork summer, all in a festive atmosphere. All year held musical evenings. Saturdays in winter and twice a week in summer, music lovers and players of cards or billiards seasoned mix musicians, sometimes known names of French and international scene. All this small world alongside in the right mood at the counter or on the terrace, shaded groves. Sires sad, so go your way....
