Downstream Padern, the cash is Verdouble again to cross a link of limestone from the mountain of Tauch, thus creating a site with magnificent gorges.
Clinging to a rock, the castle ruins above the village. This castle is monitoring the Verdouble valleys and Torgan. In 899, King Charles the Simple Padern gives to the Abbey of Lagrasse.

Aude - D 14 / D123
The chateau Padern, is a ruin on a hill, overlooking the stepped village of the same name on the banks of the Verdouble.
Particularly picturesque at sunset, it has been known as "the gates of heaven".
The castle was destroyed in the Middle Ages, rebuilt in the 17th century, and is now once more a ruin.
Go for a walk to the foothills of the Montage de Tauch down into the gorge and the bridge before Padern....

The domaine is situated to the south of the Corbières appellation, at Cucugnan, surrounded by the very impressive Cathares castles. The domaine was founded in 1995 by Fabienne and Bruno Shenck and today they own 25 hectares of vineyards, several of wich are very old, the Carignan for example are over a hundred years old. This particular erea in the mountains offers the best conditions for making flavoursome and well balanced wines: the sun, cool evenings, and the Cers ( northen wind) forming perfect conditions for the wine grapes to mature. The red wines reflect their land, complex, rich and generous.
The vineyardsare cultivated without fertilizer or pesticides, thanks to an observation of the bio-indicators, the flora end fona, and a respect for the yield of each plant. We pay great attention to the maturity of the grapes, and a vigourous selection takes place during the harvest, wich is always done by hand. We procede to a vinification process entirely free of sulfur ans yeast, with nothing else added. These areour requirements in order to produce top quality wines. We are very attentive to the grape maturation and the grape selection during the hand made picking, wich avoids using chemical products or adding yeasts, without giving up our requirements to produce quality wines. In 2013, we decided to intergate the methods of organic farming, and since 2016 the wines are certified organic...

I created "Domaine du Verdouble - Cucugnan" and settled in a private cellar in the city of Cucugnan, aware that I am the keeper of a rare and precious heritage: Terroir with exceptional wine qualities, unique historical environment, cultural environment actively supported by private actors and dynamic institutions. Although 80% of my vines are in A.O.P. Corbières, I have chosen the appellation Vin de Pays de Cucugnan for all my wines (including Corbières). Long used as a "subclass" of the AOP, the name "Vin de Pays" now once again witnesses the peculiarities of a terroir. Making a new wine means wanting to tell a new story. Cucugnan is the village of the story. From the top of the promontory, it watches over an exceptional site located in the heart of the wild Corbières, in the shadow of the Cathar castles of Quéribus and Peyrepertuse. Here it is nature that sets the pace and I, the winegrower, from pruning to harvesting, manage my vines while maturing my wines, carefully and without tricks. In this land of sun and wind, the grapes are harvested by hand, ripe and healthy. This is how natural wines are created, rich in the land and in the memory of mankind...

At the end of the Catalan world - because the border with Occitane is so close - the Can Fabre restaurant invites you to discover and enjoy the best culinary specialities of Catalonia. Jean-Philippe and his team are not kidding with quality and the notion of terroir. On many dishes, the origin is displayed: Mangalica ham, anchovies from Roque, Simmental entrecote... Cuisine from the sea or the land, simple, generous and local cuisine, but deliciously mastered. 'Monsieur knows his classics and knows how to treat us. Excellent service and a warm atmosphere are the other highlights of this restaurant. Can Fabre was born from a passion for cooking, welcoming friends and sharing good times. Jean-Philippe wanted to create the restaurant in which he would have dreamed of sharing a meal with friends or family... Mission accomplished!'
