Château de Quérigut

Château de Quérigut

Château de Quérigut is located on a rocky outcrop in the village center Quérigut (Ariege).Castle Quérigut is mentioned in a text dating from 1208. The fifteenth century until the late seventeenth century, it was repeatedly besieged by the Spaniards. An attempt to take the castle fails in 1495. In 1589, the attackers managed to burn. In 1607, Louis XIII establishes a garrison there. It will be deleted by a judgment of the State Council of 25 April 1638. The castle was burned again in 1676. In 1709, Louis XIV ordered the restoration of the castle and established a garrison again. It remains today a massive castle tower in ruins, which was the old dungeon...

Château de Montségur

Château de Montségur - Montségur

The Château de Montségur is probably the best known of all Cathar Castles. It is famous as the last Cathar stronghold, which fell after a 10 month siege in 1244. A field below the hill-top castle is reputed to be the site where over 200 Cathars were burned alive, having refused to renounce their faith. A building on this site sheltered a community of Cathar women at the end of the twelfth century. Early in the thirteenth, Ramon de Pereille the co-seigneur and Chatelaine, was asked to make it defensible, anticipating the problems to come. It is open to the public, as is a museum in the nearby modern village of Montségur. There is an entrance fee for both...

Michel Sarran

Michel Sarran - Toulouse

"Here like nowhere else..." Here, it is a house more than a restaurant, where the art of life is practiced with sweetness, discretion and charm. We welcome you with respect, friendliness, warmth and soon like our friends. The word "customer" doesn't make sense. Here everything goes by two: the dining room, the cooking, Françoise & Michel Sarran. First the dining room, I mean rooms. They are each double: The one downstairs, with modern architecture and furniture, with wood and tiling that sweeten straight lines and curves and rush into an indoor garden in springtime. Then there are the ones upstairs. There, no doubt, the notion of restaurant fades away to leave the space to a familial house. Instantly the environment is more intimate and hushed...

Mirepoix

Mirepoix

The little town of Mirepoix lies in south-west France in the department of the Ariège, the traditional name for the part of the Ariège that is home to Mirepoix being the Pays D’Olmes. This is a very lovely part of France, and includes some of the beautiful mountains of the Pyrénées. Mirepoix is truly a place where you will want to linger. There can be few pleasures greater than the simple delight of sitting under one of the shady canopies formed by the overhanging houses that surround the square, sipping a coffee or a long cool drink and watching the world go by. The numerous bistros and cafés offer a variety of treats ranging from delicious pastries and gateaux to three course meals and a glass or two of the locally produced wines. The character of Mirepoix is quite distinctive and the town oozes charm. Half timbered houses line the central square, with their upper storeys overhanging the walkways below. During its long history, Mirepoix was nearly destroyed twice, by both floods and fire, but has been rebuilt and is now considered to be one of France’s prettiest towns...

Grotte de l'Aguzou

Grotte de l'Aguzou - Escouloubre

The Aguzou cave is remarkable for its beauty and its mineral profusion. Unusual visits are proposed in the form of subterranean walks. The first part of the cave (Aguzou 1 on the map) was already known in prehistoric times because of its healing waters. It was developed as a thermal resort at the beginning of the 20th century. A second network of galleries was discovered in 1965. Another 6 km (4 miles) of breathtaking galleries were found, 1500 m (1600 yd) of which are now open to the public. The cave is still absolutely natural: there has been no artificial lighting installed, and no ostentatious arrangements. Visits are organized for small groups only, in the form of an underground hike...

Stéphane Tournié
Les Jardins de l'Opéra

Stéphane Tournié Les Jardins de l'Opéra - Toulouse

Located in an inner courtyard on Capitol Square, the very Florentine frame will enchant you with its brightness and its peace in full city center. Room, individual lounges are there to answer your expectations. Whether it is in the dining room in rotunda, in the flowery inner courtyard or around the swimming pool, reigns an unrivalled atmosphere, made by peace, by discreet luxury and by well-being, which agrees completely with Stéphane Tournié's cooking. His sophisticated cooking, full of character, flavourful and creative as one pleases shows itself of the most authentic. It emphasizes beautiful products in the respect for their flavours which it sublimates mostly. It is a great cooking from Southwest, respectful of the traditions without being a slave....

Ax-les-Thermes

Ax-les-Thermes

Twenty kilometres southeast of Tarascon, and still on the river, the spa town of AX-LES-THERMES is completely walled in by mountains and its principal value is as a base for exploring the surrounding peaks and as a staging post on the way to Andorra or on down the N20 to Font-Romeu and, ultimately, Perpignan and the Mediterranean. The town itself is small and agreeable enough, but there's little to see once you've wandered a couple of streets in the quarter to the right of the N20, which forms the main street, avenue Delcassé. Rue de l'École and rue de la Boucarie retain a few medieval buildings, and above place du Breilh, the church of St-Vincent is of architectural interest for its Romanesque tower. Just across the road you can dangle your feet for free in the Bassin des Ladres, a pool of hot sulphurous water which is all that remains of the hospital founded in 1260 by St Louis for soldiers wounded in the Crusades...
