After leaving our native Champagne area, we arrived in the Aude on 1 January 1982, full of hope and energy to a vineyard property in the village of Villelongue d’Aude. We began by restructuring the vineyard and took out all the old red Aramon vines in order to make way for Chardonnay, Chenin, Mauzac and Pinot. Our first ‘cuvée’ was created in 1983, when we produced 600 bottles. The following year 6000 bottleswere produced under the ‘appellation’ Blanquette de Limoux. In 1985, as we had too little space in Villelongue, we moved to Limoux to larger premises and were thus able to increase our production, thanks for the most part to our expansion into the American market. We now produce 650,000 bottles of Blanquette de Limoux and Crémant de Limoux in a specially designed, ultra modern ‘Chai’ (wine production plant and storehouse) and have established a presence outside France in sixteen countries around the world.. 

La Blanquette de Limoux is undoubtedly the oldest sparkling wine in the world. We know that in 1531 the monks of St. Hilaire produced Blanquette de Limoux. From the beginning of the XVI century, Blanquette de Limoux makes an appearance as a renowned wine, which was different from all other wines of the time. It is cited in a variety of different texts; an irrefutable indication of its ancient origins. One document dating from 1794 states that Blanquette was known and loved throughout France. A government decree of 18th February, 1938 recognized Blanquette de Limoux officially as ‘Appellation d’Origine Controlée’. 4500 hectares of land were designated with this ‘appellation’ in 41 communes around Limoux. A government decree of 21 August, 1990 recognized, in addition, Crémant de Limoux as an ‘Appellation d’Origine Controlée’.

  The vineyards of Limoux are situated in the far western corner of the Languedoc near the watershed, on land, which varies in altitude between 200 and 600 meters. This tempers the effect of the scorching summer heat. From a climatic point of view, the Mediterranean influence is counteracted by the effects of the ocean. This guarantees optimum sunshine in addition to a balanced rainfall. We need to add to this the close proximity of the Pyrenées, to which Limoux has always provided a gateway from the Aude.

The vines, which work well in harmony with the local soil structure of sandy clay and clay limestone are Mauzac, Chardonnay, Chenin and Pinot. The yield of 50/hl/ha is the lowest in France for sparkling wines. The grapes have to be hand picked.After an initial fermentation in vats, where the temperature is carefully controlled, the wine is bottled and then has a second fermentation lasting for several months.

During the course of this second fermentation, which we call the ‘prise de mousse’, the yeast transforms the sugar into alcohol with fine bubbles. The bottles remain in the cellars in special wooden crates (sur latte) away from light and temperature fluctuations for a minimum of nine months, twelve months for Crémant and often for several years.

The sediment caused by the ‘prise de mousse’ (the start of the sparkling effervescence) collects on the lower inside surface of the bottle. The bottles are placed on gyro-pallets, which vibrate causing the sediment to settle into the neck of the bottle.

The sediment can thus be removed when the temporary cap is taken off, the ‘liqueur d’expédition’ (sugared liqueur) added and the cork and ‘muselet’ (wire cage) put on. Finally the bottle is washed, labeled and put into boxes ready for dispatch.

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOP to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOP Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....

History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables. Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone....
