Domaine du Petit Causse stretches across the sunny slopes of the foothills of the Montagne-Noire (Black Mountain) in an exceptional wine growing area.

This vineyard is small enough to let us develop customer loyalty and satisfy our clientele in a friendly family atmosphere. It was our love of the land and our joy in the final product that gave direction to our passion.

Today, respect for the land, vines, and grapes, process have enabled us to obtain wines that are pleasing, fruity and of a quality that does us great credit.

In July and August, every Wednesday, walks with the wine grower at 18:30 (advance bookings only), guided tours of the vinification cellar and free tastings of the entire range...

  Through hard work, passionate Vignerons, strongly anchored in the country, manage to register their vineyard in protected designation of origin (AOC), they will make you discover the treasures of vineyard through tasting their wines and visiting their Domaine.

This estate is in the heart of the Minervois La Livinière area in the foothills of the Montagne Noire.

You will be welcomed by the winemakers Maguy and Philippe who will take you on a guided tour of the winery and its maturing cellar full of barrels, and give you a taste of their wines.

Situated near the village Félines Minervois, the vineyards of the Domaine du Petit Causse are planted on sunny slopes of the Minervois area, Mediterranean heath land on the foothills of the Montagne Noire. Philippe and Maguy Chabbert ensure all stages of their wine production from vine to bottling.

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

Apart from the abbey, the attraction of Caunes lies in its rich historical and architectural heritage. The façades of the buildings are adorned with numerous architectural features dating from the 15th and 18th centuries. Remains of the fortified walls which surrounded Caunes can be seen on a walk through the village. Other more recent monuments which reveal a way of life and traditions now dying out are also worthy of mention, such as the old wash houses, the irrigation channel and the cobbled lanes....

Located at the foot of the Montagne Noire, in the little village of La Livinière, the restaurant, which seats 60, was established in 2009 by Jonathan Plieu.   The service is attentive and considerate and the cuisine is creative with expertly balanced flavours. The dishes are prepared using a variety of local produce, including some organic products. In the summer you can sample seasonal local specialities accompanied by the best Minervois wines under the shade of the mulberry trees on the terrace. The restaurant also has two dining rooms for group bookings and can cater banquets for up to 200 people in the village’s community hall. From May to August, entertainment is provided in the square with music and a wine bar...
