Domaine de Parazols is owned by Jean Marie Bertrou and is situated in the south of France. This domain (45ha) has vineyards spread over two wine regions namely the Minervois and the Cabardes. The terroir of these two areas is quite different from each other. The vineyards of Jean Marie in Cabardes are characterized by a loss covered ground with large boulders and the Minervois by a bottom of slate.

This young winemaker created his private cellar in 2003. With the aim of transmitting their passion, Jean-Marie and Beatrice Bertrou will take you on a tour of their estate. This tour will show you their environmentally-friendly working methods. You can look back at the work of past generations thanks to the old tools museum. This tour is both informative and nostalgic and ends with a tasting session in the cellar.

The Mediterranean character of the region and the influence of the ocean makes some unique wines. The Mediterranean of this region is clearly reflected in their wines. Typical of this region are the surely full power and tannin rich wines and the influence of the Syrah grape. Once a year, a number of wine specialists are hired, which they will mix the new wines to give each blend its specificity. Grape varieties are Syrah, Grenache, Cinsault, Merlot, Cabernet Franc and Grenache Noir.

  Cabardès:
The wine region Cabardès ride along on the quality boost undergoing the Languedoc wines since about 20 years. The area is about 550 hectares. Specifically, the microclimate: predominantly Mediterranean, with clear Atlantic (cooling) influences. This allows thrive here grape varieties normally be limited to one of these areas. The Cabardès wines are also made up of 40% Atlantic varieties (Merlot, Cabertnet Sauvignon, Cabernet Franc) and 40% Mediterranean varieties (Syrah, Grenache) supplemented with 20% local varieties like the Cot and Fer Servadou..

Minervois:
The Minervois is a wine region in the Languedoc in southern France, where mainly are produced red wines. The most common grape varieties are Grenache Noir, Syrah and Carignan. The Mediterranean climate of the Minervois has warm dry summers. Because the vineyards in this area are higher than in the rest of the region, the nights are once again very cool. This allows develop grapes with rich and juicy flavors. Our soil, rooted in clay and limestone gives our dominant assemblies fruity syrah and the typical character of the wines of the appellation Minervois.

Domaine Parazols-Bertrou is situated 15 km from the city of Carcassonne. Beatrice and Jean-Marie Bertrou welcome you every day on their Domain to show you their many white, rosé and red wines, including the "Ni ni Ange Demon", "Le Souffle des Dieux" and the "Tentation".

Cabardès

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....


Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

   Capitelles simple dry stone shelters, are evidence of the history and work of the rural world. Laure-Minervois Fortified village, the village of Laure was surrounded by ramparts and a moat. Two towers attest to the ancient fortified wall (Tour Bousquet - nine Portal Tour). The Gothic Church of St. John the Baptist, was rebuilt several times. Some remains: the Church of Buadelle and Romanesque bell tower of Saint Jacques d'Albas. The Mézolieux round: this monument of Gallo-Roman origin is surrounded by vineyards on the old Roman road (Che-min Romieux). Grave of Saint Eugene: this dolmen located in the wood Russol is a vast burial ground dating from the mid Neolithic. Just a few years ago le Moulin Sainte Anne was a vineyard but, with much hard work by Antoine and Magali Laclive and the backing of the Mairie, there is now a flourishing campsite on the edge of the town. There are 45 level grass pitches of a good size and hedged. All have water and electricity and are terraced where necessary and landscaped with growing trees and shrubs. The facilities are modern, well kept and in keeping with the area. They include a heated pool and a very attractive entertainment area. There is close co-operation with the village and villagers are welcome to the evening entertainment...

Auberge de Clamoux, a small inn that serves a fine three-course weekday menu at 13€. Go ahead and try the salad with gesiers (duck gizzards, a regional favorite) or sample the offering of charcouterie (hams, sausages, etc). The main course is generally meat, duck or salmon, and the desserts are impressive. One lunch time here, the main dining room had been converted to a huge table seating several dozen French men and women in their 70s and 80s, plowing through huge platters of food and liters and liters of wine. Every meal in France is a celebration. Count on at least an hour and a half....
