In 2014, Béatrice and Philip Birolleau took over Domaine Les Maillols, a 13 hectare property.

Who are we ?

On the eve of our 50th birthday, we have made the choice to undertake a new challenge! Gourmets and wine lovers, our choice was also made thanks to the profession of Philip, an oenologist for more than 25 years. We want to preserve our terroir by creating wines that fully express their power and elegance.

To do this, we age our minervois in Burgundy barrels of one or two wines; which makes it possible to sublimate and soften the fruity aromas of our cuvées. Our door is always open... We are never far away to share our passion for wine and our products. You can also find us on the Wonderbox website or simply with your motorhome because we are also referenced by France Passion.

  Domaine Les Maillols has been certified High Environmental Value level 3 since 2019 and is in conversion to Organic Agriculture for the first year.

Where are we?
A hillside vineyard on the foothills of the Montagne Noire, Domaine Les Maillols is located in the town of Villegly, 10 km from the Cité de Carcassonne (visible from our vines) towards the Pic de Nore.

Our domain and our commitments:
Mediterranean grape varieties, Syrah and Grenache noir are blended to make our AOP Minervois wines. Sauvignon blanc, Syrah and Marselan complete the range of our cuvées in IGP Coteaux de Peyriac varietal wines. Mainly facing south, our 13 hectares of vines are cultivated according to reasoned principles, while privileging as much as possible biological treatments and biocontrol in order to best preserve our environment. Tradition and modernity come together on a daily basis at Domaine Les Maillols to reveal the expression of our terroir: fruity and spicy wines with southern accents.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

  Capitelles simple dry stone shelters, are evidence of the history and work of the rural world. Laure-Minervois Fortified village, the village of Laure was surrounded by ramparts and a moat. Two towers attest to the ancient fortified wall (Tour Bousquet - nine Portal Tour). The Gothic Church of St. John the Baptist, was rebuilt several times. Some remains: the Church of Buadelle and Romanesque bell tower of Saint Jacques d'Albas. The Mézolieux round: this monument of Gallo-Roman origin is surrounded by vineyards on the old Roman road (Che-min Romieux). Grave of Saint Eugene: this dolmen located in the wood Russol is a vast burial ground dating from the mid Neolithic. The "Heritage Lauranais' association has created and maintains the trail randon- born" the Capitelles"...

Just a few years ago le Moulin Sainte Anne was a vineyard but, with much hard work by Antoine and Magali Laclive and the backing of the Mairie, there is now a flourishing campsite on the edge of the town. There are 45 level grass pitches of a good size and hedged. All have water and electricity and are terraced where necessary and landscaped with growing trees and shrubs. The facilities are modern, well kept and in keeping with the area. They include a heated pool and a very attractive entertainment area. There is close co-operation with the village and villagers are welcome to the evening entertainment...

In a wine cellar atmosphere you will discover our à la carte dishes ranging and tapas, as well as a rich and varied wine list. The atmosphere is warm, aimed at customers looking for simplicity. All our dishes are "homemade". Your tasting will be enhanced with a choice of tapas, couteaux, cœurs de canard, planche de charcuterie ... Unique! For the cave addicts, an acrobatic course located at the foot of the great hall of the Gouffre Giant Cabrespine. View the cliff of the 80-meter-high iron staircase, before you enter the big discovery line, to reach the zipline of fear of heights and you will reach an acrobatic bridge 40 meters above the void on the pearl platform. After a visit to the sanctuary of bats, a Nepalese bridge will allow you to dominate the bottom of the large hall of the Gouffre. For the bravest of you, try the ultimate experience with the zipline of hell and jump 90 m above the vacuum to reach the great petrified waterfall with a total height of 120m. The lower part of the Gouffre Giant of Cabrespine is home to nearly 25 km of galleries, much of which is traversed by a majestic underground river also called the secret river. Notre Dame du Cros

Situated 2km from Caunes, Notre Dame du Cros is a remarkable site with a chapel dedicated to the worship of the Virgin Mary. Following a miraculous cure by the spring water, three small dry stone chapels were built on a steep slope with three statues, the Virgin Mary, Saint Joseph and Saint John. This is the origin of the pilgrimage of the Cros. A larger chapel had to be built as the number of devotees grew. Pilgrimages and processions were regularly organised to coincide with the feasts of the Assumption and the Nativity and the relics of the Caunes martyrs were associated with processions asking for rain, for the protection of the harvest etc. Religious rituals were also observed during Easter week. A few pilgrimages and celebrations have survived to the present day, specifically on 15 August and 8 September. Inside the church, the chancel is lavishly decorated with paintings framed with marble and gilded wood and the beautiful communion table, pulpit and font are all made of marble...
