A courtyard opens out onto the narrow streets of Trausse, in the heart of the Minervois. A row of fig trees backs onto an old stone wall. A red gate, freshly painted. The Argent Double flows nearby, the foothills of the Montagne Noire can be seen in the distance.

Here, Jean-Baptiste and Charlotte grow grapes on 15 hectares, respecting the land and the rules of organic agriculture. “For natural and honest wines you need thriving soil and healthy vines” sums up the master of the house.

All year round, the domain’s vines are cared for according to the ethics of organic agriculture, totally, as certified by Ecocert.

Here, pruning is done patiently and weeding the old fashioned way, being ploughed back in. The earth, regularly turned over and worked with patience, becomes an ally.

There is no question of rushing things, or of imposing standards. Because a good winemaker guides more than he imposes, the vines are treated with kindness, according to their needs: a goblet shape to make the most of the coolness offered by shade or spread out to gain maturity. Allowing them to live, to develop, that is the key.

  Specialties

At harvest time, the grapes are hand picked into small crates. They are then left to ferment in whole bunches, in order to preserve the flavour and the purity of the tannins. They develop in the chai without sulphur, fining or filtration. Then comes the blending: “The genius of the grape” explains Jean-Baptiste, “is that it is more intelligent than man. It’s only when you mix one variety with another that they reveal their true richness.” The earth is alive and the vines are healthy, giving sincere wines that are neither pretentious nor overbearing.

At the Senat’s there is not one single vine that is king, not one soil that takes the limelight. At the foot of the Montagne Noire, in this region where the climate changes, where the cold winds from the Massive Central meet the dry garrigue, the soil and the vines are worked “à la carte”. There is no favouritism. Each vine, each soil is coaxed into doing what it does best. The Grenaches and Cinsaults, surrounded by garrigue, and facing the Corbières, fully benefit from the Mediterranean climate. They give a well-rounded velvety-smoothness.

Full-bodied and ripe, the Carignan from the Mirabelle and 100 year old Fiau vines, develop an aroma and a surprising freshness which are far from being rustic and typical. The spicy Mourvèdres, spread out on the cool clay soil of the Trausse plains are regularly worked to help them resist the scorching summer heat. The Syrahs in Villenevue, know how to sit and wait. Turned towards the North, in a small valley facing the last reaches of the Massif Central, they are duty bound to ripen slowly in order to reveal all their aroma. Lastly, remarkably, the Merlots on the Côtes Rousses, grown below the garrigue, with their unusual hint of chocolate and mandarin.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

They serve well constructed meals, menus with choices & a la carte served with very reasonabley priced local wines. The warm welcome of the bosses, the decor classy and sober, daily menu renewed every day, garden products ... and the wine list at very reasonable rates. The gourmet menu (starter, main dish and dessert) is a feast! Opportunity to purchase wines from areas at the end of the meal. An address that we will refile word of mouth....

Located just down the hill on the main street, inside this is the local bar, while outside is a gathering place for tourists. A morning coffee can be fun. Buy the pastries across the street at the boulangerie, then order coffee. There's no problem with eating breakfast that you've purchased elsewhere, because the Grande Fontaine doesn't sell pasteries. An omelet and salad at noon can be very enjoyable and inexpensive, and full meals are available both at noon and in the evening. Reservations not normally necessary...

One of my favourite places in Caunes Minervois is La Cantine du Cure in the shadow of the Abbey. There is always a friendly face to welcome you and a little music keeping you company in the background. The staff are friendly and helpful and attentive and will assist you with your choice of fare - there is normally a choice of 3 or 4 tapas for €5 and perhaps 4 plats du jour (plate of the day)for €10 and normally ice cream for dessert.....
