




 | | | Getting off the beaten paths and venturing on the winding and picturesque roads of the Corbières, crossing the passes of Rouire, Escassie or going up the brook of Scié or the gorges of Cassie, you reach the small village of Fontjoncouse and his vineyard. Authentic village and vineyards nestled on the slopes and valleys of an altitude plateau with plots cut in scrubland. Enjoy this preserved and timeless place, almost wild, and yet comes alive under the pruners of a new generation of passionate winemakers, fallen in love with this exceptional terroir.
A winery and a dozen hectares of vines, selected, planted, cared for and finally passed on by winemakers who, before us, knew how to understand and preserve this remote terroir, who knew how to obtain naturally the best of the vines, the soil and the climate . Syrah, Grenache Noir and Centenarians Carignan Noir mark the structure and bouquet of our wines, Cinsault and Marselan complete their fruitiness.
Our history is above all the story of a transmission, transmission of the love of a region, a vineyard, the passion of the work on the vines, the wine, the cellar and a knowledge-make. We are concerned by the preservation and development of the agro-landscape and environmental aspects set up on the vineyard before us (planting hedges and trees, maintenance of paths and streams ...). Autumn 2018, we joined a process to convert the estate into organic farming AB (via Ecorcert). |

A Mediterranean
climate influenced by the winds: the
Cers, a frequent wind from the
northwest, often violent, which
generally gives its last rains on the
reliefs of Limoux further to the West,
and the Marine Wind which announces
changes of weather at spring or autumn.
Hill country, hillsides and plateaus of
modest altitude, pediments and
geological valleys at the origin of a
cooler microclimate in summer and wetter
in winter. A settled aridity at the origin of skeletal soil or "lithosols", direct witnesses of the underlying and flush geology. The basement does not lack water at the image of the village of Fontjoncouse whose etymology means "sources rushes". A singular geology characterised by the northern lobe of the Eastern Corbières thrust sheet, a scaly structure made of Jurassic limestones, marls and clay-limestones and Triassic marls clays, eruptive and evaporite formations.

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...

The original religious foundation on this site was a Benedictine establishment. The position is in a classic situation for a Benedictine abbey, tucked into a narrow, sheltered valley remote from the outside world. It is located in the Corbières area in the Aude département, just off the Autoroute between Narbonne and Carcassonne.
The Cistercian Abbey of Fontfroide was founded in 1145, and became one of the most important and richest Cistercian abbeys in the Midi. It was the murder of a monk from Fontfroide, the papal legate Pierre de Castelnau, at dawn, on the 15th of January 1208, that provided Pope Innocent III with his pretext for the Cathar Crusade.
Olivier de Termes is though to be buried here in the chapel of Saint Bernard (dedicated to Bernard of Clairvaux), which he founded.
One of Fontfroide's abbots, Jacques Fournier, became Bishop of Pamiers in 1317 and a keen inquisitor (responsible for the arrest of the village of Montaillou)...

If you love excellent food and wine, then there can be no
finer restaurant in the South of France as Auberge du Vieux Puits. This 3 star
Michelin restaurant is run by the celebrated French chef, Gilles Goujon. I can
not recommend this restaurant highly enough. The food, the service, the wine,
the cheese . . . all were excellent. Nobody has given Gilles Goujon anything for
free. On the contrary. In a bucolic atmosphere far from the mundane noise, in an
austere building –sold by the tiny Town Hall– he has been progressively
restoring for a decade, he has been able to captivate plenty of customers and
reach the top of the French guides: 5 hats in Gault Millau and 3 stars in
Michelin. We can say we are before a self-made man who had to fight and sweat
blood to reach fame; a fame very few chefs deserve so clearly...

Amidst a magnificent landscape of vineyards, pine forests, olive trees and garrigue (Mediterranean scrubland), our village stretches along the river Nielle.
Ideally located between Carcassonne and its famous fortified cité and Narbonne with both a remarkable cathedral and relaxing beaches to offer, our village deserves its double “label” of “Gate of the Hautes Corbieres” as well as “ Heart of the Corbieres-Minervois country”.
You are only a few minutes away from Lagrasse, which abbey and middle-age cobbled streets have earned it a place on the list of France’s most beautiful villages. And there is plenty more to see : the abbeys of Fontfroide and Caunes Minervois are well worth a visit, not to forget the Cathar history of the region with the castles of Termes, Villerouge Termenes, Aquilair, Minerves and many more “vertigo citadels” all within a short drive of the village. The Canal du Midi and the Cité of Carcassonne are both inscribed on the Unesco World Heritage List. They offer beautiful opportunities for a half-day or daytrip in the sun...
