Surrounded by its private pine forest, the country house of Le Pech d'André dominates a vineyard that stretches gracefuly between dry stone walls, grass strips, scrub and hedgerows of almond and wild fig trees.

The vineyard of Le Pech is turned towards the South (the better to admire the Pyrenees…), all in one piece in front of the family house. Soils from Tertiary limestones (Bartonian), composed of sandstone and marl, are perfectly suited to the cultivation of the vine.

This terroir of Minervois named « les Mourels » is one of the earliest and warmest of the Minervois, between the Causses and the Serre d'Oupia which rises to nearly 300 meters. Our terroir, our agricultural practices and our desire not to adopt the latest « developments » of normative winemaking technology, wines of Le Pech d'André are atypical. More elegant than powerful, they offer a distinctive freshness and acidity. Their vivacity evokes the Cers, this so violent wind that stirs our Occitan souls!

  In the beginning, more than 300 years ago… Cassini's map: le Pech and Azillanet We don't know exactly when Le Pech started. We only know that our family history in this place begins in 1701, when our first ancestor Jean-Baptiste d'André, from a Toulouse family, settled on some land named « Al Pech » - hill in Occitan. Four generations of men succeed until the « Demoiselles d'André » Marie, Jeanne and Louise d'André, the last ones to have this name at Le Pech in the early twentieth century.

From « d'André » to « Remaury » Louise d'André married in 1858. Her daughter, Joséphine Bel, takes over and gives birth to Jeanne-Zoe Léontine Gervies, my great-grandmother, who led the domain for over 30 years. Her daughter, Marie Simon, married Louis Remaury, my grandfather. Marc and Germaine Remaury Thus, four generations of women succeed at the domain of « Pech d'André », named as a tribute to this family before my parents, Marc and Germaine Remaury, dwell there in 1966. Together, they are moving towards direct sale at the domain and maintain environmental-friendly practices, acting as trendsetters long before the consumer awareness of products coming from a preserved nature. In parallel, they drive the progressive renewal of the vineyard, searching a better expression of the terroir through the development of more aromatic wines.

The history continues
This land is a heritage. I want to continue the tradition of authenticity and hospitality of this domain. My Ecologist skills (PhD in Soil Science) are naturally going in the direction of maintaining this heritage, its landscapes and its biodiversity. With Claude Brunel who has been working here since 1985, we are pursuing a path of sweetness… Finally, Philippe arrived at Le Pech d'André and now shares my life, my enthusiasm and my love for this domain.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic growers use no synthetic growth-regulators (such as Alar). As for not using pesticides, the organic alternative is to encourage natural predators of insect pests instead of using poisonous insecticides. Organic farmers promote "biodiversity" and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil. In wet climates the main difficulty is raised by the use of copper sulfate against mildew, which leaves over time levels of copper in the soil that need to be monitored....

In the 13th century, the catholic princes, spurred on by Pope Innocent III, decided to put an end to Cathar influence in the provinces of Languedoc, Simon de Montfort came to impose the law and the catholic faith in Languedoc by force and fire. The local barons and knights then took up arms to defend their land, their faith and their culture. Following many years of combat, they lost their independence and were forced, in humiliation, to witness the martyrdom of the Cathars under their protection, who were burnt at the stake on enormous pyres...

Located in the village of Cesseras in the Minervois Herault, Le Petit Causse has become the must-concert bar in the region. Founded in January 2014 by Bruno, the place was taken over in June 2015 by Simon and Colin. Friendly and smiling, Col welcomes you for a simple refreshment or for dining with kitchen Ducky. At the bar, even on the patio it is pleasant on sunny days in the shade of the trees and the sound of crickets, enjoying the famous fish and chips, pizza, le croque du Causse or homemade burgers. Musically, Le Petit Causse organizes concerts every Saturday from April to October, most every Thursday in July and August and a few other summer off-season nights ... Under the leadership of Fan, the program always offers quality and different music styles to be able to meet so many of you.
