In the heart of the “Haute Vallée de l’Aude” and the Cathar Country, near Limoux, at the foot of the Pyrenees, the estate was founded by the Benedictine monks of the Abbey of Saint-Polycarpe in the 13th century. It is cultivated by Aigline de Causans and Laurent Maffeïs, peasant winemakers. In a setting that promotes biodiversity, our 7 hectares of vines are surrounded by woods, meadows and streams. Our vines are cultivated according to organic farming with our three draft horses...

In organic farming, our vines therefore receive no weedkillers or synthetic pesticides. In symbiosis between plants, humans and animals, we work with our three draft horses (Rustica, Colette and Carolus) to limit the effect of compaction and thus promote soil life, while reducing our dependence on oil. . And with sheep grazing in the vines in winter. Our plots are surrounded by forests that blend white and green oak and strawberry bushes, as well as accompanying trees such as pine and almond trees. This promotes a great biodiversity that regulates the pests of the vine, in particular thanks to the numerous birds and bats.

  Scaled around 300m above sea level, our vines benefit from both the Mediterranean sunshine and the freshness that descends from the Pyrenees, two influences typical of the terroir of the Haute Aude Valley, the highest vineyard in Languedoc. The cool nights in summer thus favor the complexity of the aromas of the grapes. Our vines are planted in clay-limestone soils on mother rocks of Sandstone, which give the estate its name.

We take care to harvest healthy grapes with a reasonable potential alcoholic degree, in order to bring freshness and vivacity to the wines. The harvest is done by hand in small boxes to preserve the quality of the grapes up to the cellar. Our wines ferment thanks to the indigenous yeasts naturally present in the plots. This increases the typicity of each of our cuvées and the diversity of their aromas. We seek to limit the use of sulfur by impeccable cellar hygiene and constant monitoring of wines.

- Following the tradition of welcoming winegrowers, wine tasting is free and without an appointment, in the cellar every day from 11 am to 7 pm.
- We also offer three living visit options to share in a privileged way the experience of our work in symbiosis between man, animal and nature.

History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables. Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone....

  Saint Polycarpe is situated near the town of Limoux on a stream which is a tributary of the Aude. The town is 7 km from Limoux, 8 km from Saint-Hilaire, 24 km from Carcassonne, 31 km from Mouthoumet and 42 km from Lagrasse. Saint-Polycarpe is located on the Green Meridian, the Paris Meridian. Founded in 783 by Athala, a Spanish nobleman who fled his own country when it was invaded by Muslims, St. Polycarp was in its beginnings, a Benedictine monastery with a few houses attached to it and surrounded by vineyards. Polycarp was a Bishop of Izmir in Turkey and a very important Saint in early church history. The church of Polycarpe in the Aude is named in honour of this Saint...

The Benedictine abbey of Saint-Hilaire stands in the picturesque valley of the Lauquet. It occupies a dominant position in the heart of the former medieval fortress of Saint-Hilaire. The monastery is on a human scale surrounding its Gothic cloister. It houses the sarcophagus of Saint Saturninus, a major work by the Master of Cabestany. This was where the monks invented, in 1531, the world's first sparkling wine - Blanquette....
