Our area covers the heart of Cathar country, 5km from Limoux between Carcassonne and the Pyrenees, on hilly and sunny hillsides. The vine is cultivated for centuries. It's exceptional topography makes it one of the best terroirs of Limoux. The estate is located on clay-limestone plateau 250m above sea level, facing south and overlooking the hill that protects it from the north wind. The winery cultivates 35 hectares of vines planted with different varieties, allowing the assemblies of our wines.

The area belongs to the family Geraud-Liria. Christian directs operations. It is supported on the ground by Mohammed. Veronica Luc and Pierre offer a helping hand at times. Manuel with his rich experience of 65 years in the wine knowledge gives his opinion.

L’Oratoire
Vin d’appellation d’origine Protégée, la cuvée « L’Oratoire » is a blend of three grape varieties, which consists mostly of Syrah. Merlot and Cabernet Sauvignon are also within the alchemy of this wine, which provide an elegant balance. This micro-cuvée, 600 bottles a year, ten months in oak barrels, presents a robe with a beautiful intensity. His nose is peppery, with notes of vanilla and black cherry. His mouth structured with silky tannins ends with aromas of fig confit, thyme and rosemary. Young drink or leave to 10 years, it will greatly enhance the dishes of red meat or game, grilled or in sauce and grated cheese.

  Blanquette de Limoux Méthode Ancestrale
Especially sweet and fruity, obtained exclusively from traditional grape of the Blanquette de Limoux, Mauzac, which gives it its explosive fruit, "The Ancestral" is distinguished by aromas of apple rennet, honey and white flowers, fruity nose, mouth length and nature of bubbles, sweet Blanquette "Ancestral Method" continues the tradition of the first sparkling wine in the world, born in Limoux before 1531. Elegant, refined and slightly alcoholic, she is an excellent refreshment.

Blanquette de Limoux Brut Tête de Cuvée
The « tête de Cuvée » is the fruit of centuries of refinement of the ancient recipe of the Blanquette de Limoux. The additions of Chenin and Chardonnay brings freshness and delicacy with aromas of green apple, acacia flowers and Mauzac apricots. The bubble is well formed, soft and fragrant, and remains long in the mouth to appreciate the finesse of its aromas. Serve as an aperitif or to highlight a fruit dessert. Some say it comes into its own with cassoulet.

Crémant de Limoux Rosé
Nose of white flowers combined with subtle notes of citrus and plums, the Cremant de Limoux is characterized by a rounded palate and fine bubbles that stretch the length. The Pinot touch gives it a meaty flavor and festive hues that add elegance to the liveliness and peach aromas of Mauzac, Chenin and Chardonnay. Ideal as an aperitif or with dessert.

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOC to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOC Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....

History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables. Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone....

Saint Polycarp (Saint Policarpi in Occitan), has 165 inhabitants (census 2009), which are called Saint-Polycarpiens. The village of Saint-Polycarpe is located on the Meridian Green, the Paris Meridian. The Saint-Polycarpe brook crosses the tributary of the Aude 7 km from Limoux, 8 km from Saint-Hilaire, 24 km from Carcassonne, 31 km from Mouthoumet and 42 km from Lagrasse. The name of Saint Polycarp given to the abbey will also become the name of the village, the name of the primitive village being Rivograndi: Rieugrand. This patronage of Saint Polycarp suggests that the abbey held relics of the saint of Asia Minor, where he was born in the late 1st century AD.
