Originally the seat of a Gallo-Roman camp as evidenced by the existence of a well tank dating from that time, the Sapinière takes its name from the first trees that existed on the current site of the park. These firs were offered to Viollet-le-Duc to help rebuild elements of the Château Comtal, in the heart of the City of Carcassonne. In 1865, a Bordeaux merchant, Pierre Clarenc, acquired several pieces of land and built the central building, as well as the various farm buildings. He then makes sure to build this area around wine. La Sapinière was bought in 1900 by François Embry, then sold in 1960 by his daughters to a cousin: Georges Ramond. His grandchildren, Dominique and Joelle Parayre, decided in 1997 to recreate the abandoned wine business fifteen years earlier.

An exceptional location
The estate faces the city and covers 16 hectares including 11 hectares of vines. The vineyard is located on a hill from where the vineyards gently descend towards the Aude river. A wealth of both Mediterranean and oceanic: at the border of two major climatic influences of the region, Mediterranean and oceanic, Sapinière combines two types of grape varieties:
- 3 Atlantic grape varieties: Merlot, Cabernet Franc, Cabernet Sauvignon
- 1 Mediterranean grape variety: Grenache
Red Wine = Red Wine Rosé = Rosé
 
  The almost permanent winds with the dominant Cers and the Autan or sea wind, have a key role in the quality of the plant and contribute to its typicity; moreover this wind makes it possible to limit considerably the health treatments applied to the vine.

La vigne
Quality and respect for nature in first place: reasoned agriculture both for the work of the land and for interventions on the vines; pruning, disbudding, suckering, trellising, thinning... are done by hand; tillage is light to limit evapo transpiration but without affecting the soil equilibrium. Finally careful monitoring of ripening and maturity of each plot allows the harvest of each at the optimum time.


Un travail d’orfèvre
Each plot is harvested at night at the time of physiological rest and with cold temperatures to prepare the first phase of vinification namely cold pre-fermentation. In accordance with the specifications of the Protected Designation of Origin (AOP) Malepere, the Domaine produces reds and rosés.

The Malepère region was awarded AOC status on May 2nd 2007. It is a hilly area south-west of the city of Carcassonne which is included in the appellation along with 31 other towns and villages. Although the area claims a great history of wine making it was in the 1970’s that the vineyards began to be replanted and VDQS status was granted. VDQS is the intermediary wine designation between Vin de Pays and AOC and is a testing ground for would-be AOC’s to prove that wines from all the producers share a common personality before they can be awarded full AOC status. Although an obscure region the Malepère is well worth a visit and offers a very different terrain to the more recognizable Languedoc appellations. There are many interesting medieval circular villages to visit. They were built this way to form ramparts to act as protection for the inhabitants. The Cathar religion was strong here and the area is immersed in history and folklore...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...
