Domaine de Cantalauze is located at the gates of Carcassonne and the famous medieval city, la Cité, between the villages Trèbes and Villedubert. We would like to welcome you in a quiet environment on the edge of the Canal du Midi, a UNESCO World Heritage Site. Thomas, the owner of this place will be your host to discover his estate. The Domaine de Cantalauze welcomes you to the domain to introduce you to our variety of products and to improve our own wine, our cultivation of saffron and our own olive oil production. Domaine de Cantalauze - Trèbes
Domaine de Cantalauze has different types of vines. The terroir is conducive to the development of a quality wine.

We have been cultivating our own saffron for many years. It is a high-quality saffron that originates from reasoned agriculture...

We produce an extra virgin olive oil. The harvest is done by hand to keep the fruit. We use different types of olives for this.

  Un Terroir

A gravel path, parcels basking in the sun, a wooded path that meanders to the Canal du Midi. That is what awaits you at the Cantalauze estate. A place completely disconnected from the time and yet so close to the city.

Des Hommes

For more than 3 centuries the Cantalauze estate has welcomed a multitude of generations. We are very attached to the history of this place and those people who contributed to the development of the estate. It is in this spirit of continuity and tradition that we imagine the future.

Une Émotion

I still remember my first visit to the estate. That day when I said "why not". After having spent a number of years in the trade, such a changeover was not always clear. But the peace and beauty of the place immediately appealed to me. It is this emotion that I would like to share with you during your stay with us.

Minervois

A.O.P. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

The Lac de la Cavayère (Cavayere lake) is a large man-made lake not far from Carcassonne Chateau that was built in 1988. It is surrounded by the beautiful Mediterranean landscape and is spread over 40 hectares. A footpath goes all the way round the lake, which is a leisurely hour and a half's stroll. There are also two beaches (a sandy one and a pebble beach), which are suitable for swimming and have life guards present during the summer, a play area for children with bungee cords attached over trampolines, to give you extra bounce and o2 - an adventure park created by hanging ropes between trees where you can climb, slide and swing, including a long 'slide' over part of the lake itself.
