The Domaine d’Auriac is built on the ancient Carsac oppidum, where the story of Carcassonne, a Unesco World Heritage site, begins. For three generations, the Rigaudis Family has reinvented this 19th-century townhouse, built over the cellars of a Carolingian Abbey – ruled over by calm and fine dining in the shade of the 300-year-old surrounding park. The restaurant at the Domaine serves the original recipe for the typical local “Dieu le Fils” cassoulet. In a region where history, mysteries and legends, such as the story of Abbot Saunière’s treasure in Rennes-le-Château, abound, discover Cathare abbeys and castles whose ruins rise from cliff tops and rocky promontories.

 You will enjoy Gourmet eating in Le Restaurant Bernard Rigaudis and le Bistrot d'Auriac. The dining room with cloth in rare and precious fabric continues on terraces into the gardens, facing the golf course. In winter, the flames of the great fireplace accompany the dinners of the guests...

Featuring an seasonal outdoor pool, a terrace and a Michelin-starred restaurant, Domaine d’Auriac is located in Carcassonne. Free WiFi is available. The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...

History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables. Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone....
