Acquired by Baroness Philippine de Rothschild and her two sons, Domaine de Baron'arques is located in Saint-Polycarpe, close to Limoux.

Acquired in December 1998 by Baroness Philippine de Rothschild and her two sons, Philippe Sereys de Rothschild and Julien de Beaumarchais de Rothschild, this old estate, that already existed in the 17th century, has been subject to a major renovation of its vineyards and winemaking facilities. The 2003 vintage, Year 1 of Domaine de Baron'arques, is one of the first to be awarded AOC Limoux rouge appellation. Due to the quality of its soil and its wines, Domaine de Baron'arques takes it rightful place alongside the famous Rothschild family’s other estate, including the illustrious Château Mouton Rothschild.

Domaine de Baron'arques is located in Languedoc, close to Limoux, in Saint-Polycarpe. The Domaine is a single 110 hectares (272 acres) estate, 43 hectares (272 acres) of which are planted with vines. Located 400 km from the Atlantic Ocean and 100 km from the Mediterranean, the vineyard is subject to the climatic influence of both water masses, ensuring optimum sunshine and balances rainfall. Also close to the Pyrenees, the parcels are at an altitude of 250 to 350 meters, tempering the summer heat. The vineyard is planted with 70% Bordeaux varieties (Merlot, Cabernet Sauvignon, Cabernet Franc) and 30% Mediterranean varieties (Syrah, Malbec) for the red wines and 100% Chardonnay for the white wine...

From the vine to wine
Like the vineyard, the wines receive the same meticulous care and attention as Rothschild family other estates. The grapes are harvested by hand in 12-kilo open baskets, like in Château Mouton Rothschild, Opus One or Almaviva. After alcoholic and malolactic fermentation, the Premium red wine is matured for 12 months in oak barrels, either new, either one to three years old. La Capitelle de Baronarques, the Domaine’s second red wine, is oak-matured for up to six months. The Premium white wine is fermented and matured in oak barrels (40% to 50% depending on vintage) for 8 months.

"A lovely, deep and glittering ruby red, the wine has a subtle and pleasant nose with a seductive aromatic complexity. On airing, scents of rose and peony might mingle with notes of blackberry, raspberry, and jammy fruit, enhanced by attractive toasted aromas. Defined, full, and well balanced, the palate reveals black fruit flavors with notes of roasted coffee and cocoa. The mid palate is dense but fresh with a fine tannic structure, while the long succulent finish displays pleasant coffee and spice notes".

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOC to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOC Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....

  Saint Polycarpe is situated near the town of Limoux on a stream which is a tributary of the Aude. The town is 7 km from Limoux, 8 km from Saint-Hilaire, 24 km from Carcassonne, 31 km from Mouthoumet and 42 km from Lagrasse. Saint-Polycarpe is located on the Green Meridian, the Paris Meridian. Founded in 783 by Athala, a Spanish nobleman who fled his own country when it was invaded by Muslims, St. Polycarp was in its beginnings, a Benedictine monastery with a few houses attached to it and surrounded by vineyards. Polycarp was a Bishop of Izmir in Turkey and a very important Saint in early church history. The church of Polycarpe in the Aude is named in honour of this Saint...

The original château, built in the XVII century, is situated on a wine estate, established for several generations. It has been transformed into a 3 star hotel, where you will be welcomed into a calm romantic atmosphere. Some are available with four poster beds or dramatic canopies, and all have satellite television, air conditioning and en suite bathrooms. Open the doors of the ancient stable and discover the restaurant with walls decorated with remnants of its past life, including the names and regalia of its old resident. In this warm atmosphere you can enjoy local cuisine, created by Louis Gobin, that includes, amongst many other dishes, pan fried foie gras with figs, cassoulet, suckling pig, confit of duck and snails à la carcassonnaise, all accompanied by wines produced on the Cavanac estate....
