The Côté Resto restaurant is part of the Domaine Gayda winery and overlooks the vineyards. Christophe and his team offer authentic, traditional and tasty dishes made with fresh local products. With its terrace and spectacular views of the Pyrenees, Côté Resto welcomes you for lunch and dinner.

Côté Resto is located in the foothills of the Pyrenees and surrounded by vineyards, Côté Resto is a new destination in the Languedoc, 25 km southwest of Carcassonne, in the village of Brugairolles.

Domaine Gayda was built in 1749 as a Staging Post for travellers where horses were refreshed and changed. The farm buildings have since been converted into luxury accommodations...
  The owners Tim Ford and Anthony Record joined forces with winemaker Vincent Chansault in 2004, creating the modern face of wine from the region. On the site of the famous “l’arbre de Moscou”, we built the winery, restaurant and Boutique. This iconique tree got its name from the land registry title of the vineyards surrounding the Domaine. The tree was a navigation beacon used by the ‘Aeropostale’ pioneers of the air postal service made famous by pilots such as Antoine de Saint-Exupéry.

Domaine Gayda has a passion for the traditional ‘cépages’ grown across the many diverse soils and climates situated throughout the Languedoc. Also, varietals such as Cabernet Franc and Chenin Blanc have been planted at the home farm where the climatic influences of the Atlantic allows these imported varieties to flourish. While the vineyards are firmly rooted in tradition and “terroirs”, the winery itself is all about the innovation, with investments in all the latest equipment and technology ensuring vinification and maturation is carried out in optimum conditions.

In the largest wine region of the world, Domaine Gayda strives to create wine with provenance and a sense of “being” that is a true reflection of the quality and diversity of the Languedoc Roussillon...

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOP to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOP Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....


Malepère

A.O.P. Malepère - Côtes de la Malepère

The Malepère region was awarded AOP status on May 2nd 2007. It is a hilly area south-west of the city of Carcassonne which is included in the appellation along with 31 other towns and villages. Although the area claims a great history of wine making it was in the 1970’s that the vineyards began to be replanted and VDQS status was granted. VDQS is the intermediary wine designation between Vin de Pays and AOP and is a testing ground for would-be AOP’s to prove that wines from all the producers share a common personality before they can be awarded full AOP status. Although an obscure region the Malepère is well worth a visit and offers a very different terrain to the more recognizable Languedoc appellations. There are many interesting medieval circular villages to visit. They were built this way to form ramparts to act as protection for the inhabitants. The Cathar religion was strong here and the area is immersed in history and folklore...
