At the heart of the village appellation "La livinière" 1er Cru du Languedoc, our wines are made from Carignan, Grenache, Mourvèdre and Syrah grape varieties.

Located on the slopes of Cesseras, made up of clay-limestone terraces 80 m to 300 m in altitude, our terroir benefits from a full southern exposure and perfect sunshine.

  In 2001, Nelly and Christian Gastou delivered their grapes to the cooperative cellar. But wanting to go further in the process of enhancing these superb old vines, they have chosen, with the help of oenologist Claude Serra, to harvest, vinify, age and bottle this production.

In 2006, the 4 hectares of La livinière du Clos des Roques allowed an annual production of 10,000 bottles. Located in the heart of the first Communal Appellation of Languedoc, the Clos Des Roques vineyard is divided into three distinct islets.

In 2018, 2019 and 2020, Christian and Claude Gastou, planted plots of truffle oaks (600 trees), but also many varieties such as pomegranate, olive, apricot, peach .... These trees on the edges of the plots thus ensure the biodiversity and bring a nice touch to the Minervois landscape.

L’Ordalon (le jardin des ormes)
: at an altitude of 80 m, on the outskirts of the village, these first white clay terraces facing south, very warm and sheltered, allow the production of supple and fruity wines.

Le Clos des Roques: at an altitude of 120 - 130 m, located on the heights of the village of Cesseras, this more limestone terroir benefits from the smoothness and regulation of stone. This patchwork of small plots gives powerful wines that affirm the originality and personality of Clos des Roques.

Le Mal Pas (le mauvais passage): The oldest Carignan and Mourvèdre in the vineyard have been cultivated since 1945 on this extraordinary hillside located at an altitude of 180-200m overlooking the vineyards of Minervois. The wine produces the race, character and longevity of the Grand Crus.

La livinière

La livinière

La livinière is an old wine village with 600 inhabitants and is located in the well-known and beautiful wine region of Languedoc, including the cities of Montpellier, Carcassonne and Narbonne. Many of our fellow residents live from wine-growing. La Livinière has a grocer, a bakery, a doctor a pharmacy, a restaurant and of course several châteaux, where you can enjoy and taste delicious and often awarded A.O.P. wines. Olonzac is a larger village a few minutes away, for your visit to restaurants, larger shops or pleasant terraces and the market on Tuesday morning is also worth a visit. The rural La Livinière is located at the foot of the Montagne Noir. An area with a lot of natural beauty, where you can walk, cycle, picnic for hours, or swim in the crystal clear streams and rivers that have made their way through imposing rock faces...

Organic Wine

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic growers use no synthetic growth-regulators (such as Alar). As for not using pesticides, the organic alternative is to encourage natural predators of insect pests instead of using poisonous insecticides. Organic farmers promote "biodiversity" and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil. In wet climates the main difficulty is raised by the use of copper sulfate against mildew, which leaves over time levels of copper in the soil that need to be monitored....

Located at the foot of the Montagne Noire, in the little village of La Livinière, the restaurant, which seats 60, was established in 2009 by Jonathan Plieu.   The service is attentive and considerate and the cuisine is creative with expertly balanced flavours. The dishes are prepared using a variety of local produce, including some organic products. In the summer you can sample seasonal local specialities accompanied by the best Minervois wines under the shade of the mulberry trees on the terrace. The restaurant also has two dining rooms for group bookings and can cater banquets for up to 200 people in the village’s community hall. From May to August, entertainment is provided in the square with music and a wine bar...

The restaurant "Ô portail Ô" is located on a nice square with a small fountain and tall trees which provide refreshing shade on hot summer days. The name of the square used to be "Place de la République", but is now called, how could it be otherwise; "Place du Portail Haut". The menu consists therefore of a surprising range of western and oriental delicacies.The chef, owner of the restaurant, has gained knowledge and experience in renowned restaurants in Belgium and is also passionate by the Oriental cuisine. The menu consists therefore of a surprising range of western and oriental delicacies. About 30 years ago the restaurant was a bar. Evenings with music and dance were organized. The clients used to enjoy also the use of the 'pétanque' track. For years the cafe was abandoned and empty until the new owner refurbished the whole building and opened the restaurant “Ô portail Ô”. There are still some original elements remaining like the underside of the bar, the floor and of course the enormous mirrors...
